Recent Things in the Southern In-Law World

Hey! Or should that be BOO?! Another week has passed and I am so excited for the weekend!

Why? Well, because Jesse's alarm won't be shocking me awake at 6am for one and also because we have lots of fun things planned! 

But let's take a look at what we've been up to lately >>
Smashed iPad Screen


Recent Tears: Let's start with the bad and get it over and done with. I kinda sorta smashed my beloved iPad on Tuesday night and then headed out to the kitchen with iPad resting in my hands like a dead animal and tears in my eyes. I'm a big sook when it comes to breaking anything and I did a seriously good job in breaking my iPad.... let's just say metal water bottles and iPads don't mix.

Recent Happiness: This weather!! I can finally walk around in shorts and a tshirt without six thousand and seventy three goosebumps. Wahooo!

Garden progress at The SIL Farm

Recent Progress on the SIL Farm: Our veggie patch is booming and I've decided all the SIL Farm needs now are a couple of chooks.... though... I'm terrified of birds so that's probably not the world's greatest idea. Too bad puppies can't lay eggs or I'd have an excuse to buy dozens :P 

Healthy Eggplant Involtini

Recent Dinner Deliciousness: Eggplant Involtini! Last night I wasn't sure what I wanted to make for dinner and Jesse had told me that he'd eat whatever I was eating (which didn't give me any ideas either!) so I had to put my thinking cap on. We had eggplant in the fridge and I kept dreaming of the ricotta stuffed zucchini flowers we had in Bali, so I decided to combine the two and make a delicious Eggplant Involtini. 

It was so ridiculously good (albeit quite ugly). I really need to photograph it properly to share with you all soon! I had mine topped with a pesto sauce whilst Jesse had a more traditional tomato and basil sauce on top. 

Christmas Baking Prep

Recent Baking Adventures: I told you we were already in the Christmas Spirit and we still are. This week I've been whipping up lots of healthier Christmas treats ready to share with you over the coming weeks (I've decided Christmas Recipes should start on November 1 so keep an eye out for a yummy recipe on Saturday!). From chocolate truffles and pumpkin pie baked oatmeal to ginger cookies, shortbread and everything inbetween. 

I actually just ate another ginger cookie as they're sitting in the tin on the bench in front of me - and I can confirm that they are still seriously, ridiculously good (though I'll happily eat 6000 more if you'd like me to test that ;P) 

Sticky Asian Noodle Stir Fry

Recent Obsession: This ridiculously delicious vegetable stir fry has taken first place position from our Tahini Soy Noodle Stir Fry and we've been eating it every week. The sauce is perfect - just a little bit sticky with heaps of flavour. Yum, yum, yum. I need to photograph it ASAP and stop being lazy so that I can share it with you all!

  1. Yummmmmyyy~! Your eggplant dish is making my mouth water! I'm a huge fan of eggplant and could eat it for {almost} every meal. And how funny. Now we're FINALLY getting fall weather in socal, and I'm loving it. It's even better because it's soooo cloudy and feels like it's going to rain. It's my favorite and I get soo extra giddy in this weather! Ironic, I know. Okay sorry I'm done with my needless passionate rant, lol.

    I cannot stand the cold - I'm someone who is almost constantly cold anyway so winter is my nemesis :P I'm the one who is basking in the heat whilst everyone complains about how sticky it is.... unless I'm trying to sleep - there's nothing worse than being hot when you're trying to sleep
