Recent Things: Celebrations upon Celebrations, Gaming Ban & WIN Tickets!

Recent Things in the Southern In-Law World

Hey sweet things, Happy Friday! This week has been jam packed as it was a short week (with Monday being a public holiday) and I am so ready for a weekend..... even if I was wishing it was another four day one :P 

A lot has happened since last week's Recent Things post though, so I have a lot to fill you in on - and this post even includes a GIVEAWAY! So let's get to it!

Good  Friday Celebrations and Jesse's Birthday Combine


Recent Celebrations; Last Friday was my lovely husband's birthday (as well as Good Friday) and we celebrated with our traditional seafood feast. As the birthday boy, Jesse got a whole lobster mornay instead of the usual half so he was as happy as a pig in mud.

Jesse's Birthday Pumpkin PieBut the spoiling didn't stop there. For dessert, Jesse asked for Pumpkin Pie as his birthday dessert yet again this year (his favourite Healthy Pumpkin Pie Recipe) so he was eagerly awaiting it all night.

On Saturday, Jesse headed out to the movies with Dave to see Fast & The Furious 7, leaving me at home to enjoy the peace and quiet and get my bake on for our next lot of celebrations on Sunday!

On Sunday we had a barbeque with friends and family after church and I whipped up our Lightened Up Healthier Butter Cake Recipe, made as mini cupcakes and topped with vanilla buttercream frosting and chocolate sprinkles for Mr Sprinkle Hater himself and they were seriously ridiculously good. To the point where someone hid extras so she could keep them for herself :P

Recent Fun; Jesse has vowed not to play his video games on the weekend in an effort to spend more time with me (yay!) and he found he actually had a way better weekend than he normally would (about time he realised that - right?!) and even found that he had time to help me make dinner. In fact, he enjoyed helping me so much he's decided every weekend we need to have dinners we can make together as it's more fun that way. 

Now I've just got to work out some recipes that Jesse can help me with! On Saturday night the dinner he helped with was our favourite Ham and Cheese Cornbread Bakes (which I really need to share the recipe for!).

Recent Dinners: And speaking of Ham and Cheese Cornbread Bakes, there they are above. A crunchy cornbread outside filled with ooey gooey melty cheese with ham and a touch of mayonnaise or aioli. So so good! Here's a look at what else has been on our dinner table this week; 

Baked Sesame Garlic Chicken with Rice Noodles, Steamed Vegetables and Avocado
Healthy Taco Tuesday
Friday: Friday was our Good Friday Easter Feast. As a non-seafood eater, I whipped myself up some Avocado and Basil Spaghetti!

Saturday: 
Saturday was Ham and Cheese Cornbread Bakes which we each filled ourselves and served up with salad.

Sunday: We had friends over for a super extended long lunch and we wrapped up the night at around 11pm so we picked at leftovers for dinner.

Monday: On Monday night we had Baked Sesame Garlic Chicken Breasts with Steamed Veggies, Avocado and Rice Noodles (rice for Jesse and minus the avocado - but that just left more avocado for me, ha :P). I also just updated that recipe as I made some changes!

Tuesday: Taco Tuesday! Jesse had burritos whilst I had crunchy tacos. Beef and black bean tacos are our favourite!

Wednesday: Wednesday was a crazy busy day for both of us and I didn't feel like eating meat and neither did Jesse so we had what we like to call our "Corn on the Cob Pasta". It's stupidly simple but seriously delicious. 


Thursday: Last night we had some kipfler potatoes waiting to be used up so we repeated last thursday's dinner of Grilled Chicken Breast with our Healthier Creamy Mushroom Sauce, baked kipfler potatoes and steamed veggies. Omnomnom.

  1. Those cornbread bakes look AMAZING! Wow! The best thing I've eaten this week would have to be my dark chocolate Easter bunny... chocolate just tastes better when it's in the shape of a bunny, somehow :P


    That's wonderful that Jesse took a break from his video games for you! If only I could convince Eric to do that... :P

  2. Haha, you are so right - I feel like many things taste better when they're either mini or in cute shapes :P


    You should definitely work on Eric - it only took me SEVEN years to convince Jesse haha :P

  3. Haha, I tend to be a bit meticulous when I cook so I've had to learn to just let it go and have fun when cooking with Jesse as he's definitely not meticulous :P
