Christmas time is my favourite time of year. The food, the family, the frivolity - but it also brings with it something I don't love... leftovers

You see, whilst I'd never see remaining desserts as leftovers, I've never been a fan of savoury leftovers. 

I'm the black sheep in my family because everyone else sees leftovers as a positive. But me? I see the mountains of leftover ham and bits and pieces boring and monotonous and bleh....

Well, I did... but this year, I see those leftovers as ingredients... because this recipe will totally change the way you think about leftovers.

Perfect for using up extra bread or rolls and ham that always seems to be leftover after Christmas, this Ham and Cheese Strata Recipe is super versatile and super delicious.

We've been making it for breakfast and lunch and dinner for quite some time as it works well for just about every kind of meal. 

Best of all? It's a recipe that's super easy to make - and you can make it in advance to reheat and eat later (or even freeze to reheat and eat later!) so it's an awesome meal prep recipe.

Easy Healthy Ham and Cheese Strata Recipe - gluten free, healthy, low fat, high protein, christmas leftovers, easter leftovers, clean eating recipe

Easy Gluten Free Ham and Cheese Strata Recipe
low fat, gluten free, high protein, clean eating friendly, nut free, sugar free
makes 4 large servings or 6 smaller servings

5 large eggs 
1/4 cup plain greek yogurt 
3/4 cup milk 
1/2 tsp garlic salt 
1 cup shredded cheese (we used reduced fat cheddar cheese)
1 cup sliced ham 
1 cup frozen peas (you can use more/less/leave them out or use other vegetables in their place - I love using asparagus in this recipe as well) 
3 cups cubed bread/bread rolls (use whatever bread you like - I use gluten free sandwich bread)
1/4 cup (25g) shredded parmesan cheese, to top
  • Preheat your oven to 180C/355F. 
  • Line an 8" baking tin/dish with baking paper and set aside.
  • Mix your eggs, yogurt, mustard, milk, salt, cheese, ham and peas and mix to combine.
  • Add in your bread cubes and mix until all of your bread is coated with the egg mixture.
  • Pour your bread mix into your prepared pan, smoothing out the mix to form an even layer.
  • Sprinkle your strata with your parmesan cheese, cover your baking tin with foil and bake your strata for 30 minutes.
  • Take the foil off the top of your tin and bake for a further 15-20 minutes or until the strata is lightly golden and set. 
  • Allow your strata to cool slightly before slicing and serving. 
  • If you want to make this ahead of time, allow your strata to cool before placing it into the fridge to chill until you're ready to serve.
