Yep, I am that kind of basic blogger - but when Jesse named this cake as one of THE BEST cakes I have ever made, I knew I needed to share it.

And I promise you, this cake won't disappoint.

Recent Things: The Towel Thief

Helloooo, friend!

I am STUPIDLY happy today because it feels like SPRING! Yesssss, the weather forecast does say that after the glorious sunshine we'll have today, it will rain and it will be really freaking cold for the rest of the weekend and much of the week ahead... but I'm choosing to live in the moment and pretend like Spring is 1000000% here and I don't actually need a tropical holiday to escape it 😜

But let's leave the weather talk to old people,

Gluten Free Chocolate Coconut Slice Recipe

Gluten Free Chocolate Coconut Slice Recipe - this easy slice recipe is made in minutes with crisp, chewy edges and a creamy frosting on top. No mixer needed, just melt, mix, bake and enjoy! With all the flavour of a bounty bar, these frosted bars are a bit like a cookie crossed with a brownie.

As a child, I hated coconut.

I thought people who loved bounty bars and cherry ropes were strange, I though macaroons were a disgrace to the human race and would turn my nose up at any coconut enhanced treat.

But somewhere along the way, I fell in love with the enemy. You see, now I’m that “strange” person who puts coconut in ALL THE THINGS... and I promise you they’re delicious.

This Coconut Chocolate Slice Recipe came about on a whim. I decided I wanted to bake something sweet (and chocolatey) and there was a packet of shredded coconut in the pantry that was calling my name.

What I ended up with was a brownie-like slice that’s crisp and chewy, with a creamy frosting and delicious coconut flavour. It’s super simple to make and seriously delicious to eat.

Helloooo! Happy Friday!

If you were speaking to me in person right now, that would come out much more raspy than perky because I am sick with my second flu this month 😑

I mean, seriously. Spring could not arrive any faster. Winter and its germs need to exit promptly. But luckily I am feeling slightly better today so here's hoping my germs are on their way out.

But first, I've got to catch you up on our week!

Every single year around this time, I have a bit of a problem...

You see, whilst we live in Australia that is slowly heading towards Spring, we have so many friends and family members in the US who are racing towards pumpkin spice season... oh wait, I mean fall ðŸ˜‰

Pumpkin spice isn't really a thing in Australia, but usually we're in the US around this time and it's hard to find anywhere without a pumpkin spice something. Pumpkin spice lattes, pumpkin spice bagels, pumpkin spice peanut butter - even pumpkin spice M&M's.

Sooooo, what's an Australian girl to do when she wants in on the pumpkin spice action?

Why, make Pumpkin Spice Baked Donuts, of course.

They're soft and fluffy with a crunchy cinnamon sugar coating and just the right amount of spice.

So what are you waiting for? Regardless of where you are in the world, you need these donuts. They're the perfect quick and easy treat as they're made in minutes and will be devoured just as fast 😜

Recipe: Homemade Chocolate Covered Popcorn + A Free Cricut Father's Day Printable

World's Best Pop Father's Day Gift Idea with Homemade Chocolate Popcorn Recipe

This Homemade Chocolate Coated Popcorn Recipe is gluten free, vegan (or not!), refined sugar free, nut free, dairy free and so easy to make. The post also includes a free Cricut Vinyl Sticker design for a “World’s Best Pop!” Father’s day or Christmas gift for your Dad or Grandpa! Perfect for kids birthday parties, a homemade gift idea or whenever you want something sweet! Popcorn can be air popped or popped on the stovetop.

Click to pin this recipe on Pinterest!

I love popcorn. I don't know what it is about it, but I just do - especially if it's flavoured popcorn.

Growing up, there was this popcorn stand at a local shopping centre that had all the flavours you could imagine - and every time I went shopping there with my Dad, he'd let me get a small cup of whatever I wanted.

Sometimes it was chocolate, sometimes it was caramel, sometimes it was salt and vinegar - and for my sister, it was always rainbow popcorn.

And that popcorn recipe is exactly what inspired this super simple Father's Day gift idea!

Homemade Chocolate Popcorn Recipe Gluten Free, Vegan, Healthy, Clean Eating Recipe, Sugar Free

This Chocolate Coated Popcorn Recipe is super simple to make - and it's seriously impressive.

To turn it into a gift, all you need is a big airtight jar (my one pictured is from IKEA but I don't recommend it as it doesn't actually seal!) and my World's Best Pop! sticker which you can access here on Cricut Design Space.

I printed my sticker on some white adhesive vinyl, but you could use whatever colour you like. Simply go to the design page and hit make it! Also included in the design is a second back layer which you can use if you wanted a layered sticker.

Don't want the layer? Don't worry! Simply remove it or just cut the top layer.

Once you've cut your sticker, weed out the excess pieces, apply your transfer tape and clean the outside of your jar with some rubbing alcohol (this helps it stick). Apply your sticker and you're ready to fill your jar with popcorn!

Homemade Chocolate Popcorn Recipe Gluten Free, Vegan, Healthy, Clean Eating Recipe, Sugar Free

This popcorn is also perfect for any time eating - or for a birthday celebration. You can also cut your own DIY popcorn boxes using cardstock and the Cricut with this Popcorn Box Template. Once you've cut it, simply decorate with vinyl or whatever you like, fill it with popcorn and you're good to go

But let me share the recipe with you! >>

Recipe: Easy Gluten Free Chocolate Swirl Cheesecake with Brownie Crust

Easy Gluten Free Chocolate Swirl Cheesecake with Brownie Crust - gluten free, baked cheesecake, dessert

Easy Gluten Free Chocolate Swirl Baked Cheesecake Recipe with Brownie Crust - Chocoholics pay attention, this is the cheesecake for you! Rich and creamy, this New York style easy baked cheesecake recipe is foolproof and perfect for dinner parties or the ultimate birthday cake. The brownie base and chocolate and vanilla swirl toppings are the perfect mix for this gluten free dessert.

I am one of those people who thinks that cake is never idea.

I mean... 88% of the reason I probably have this blog is so I have an excuse to make cake and desserts all the time and no one bats an eyelid.

When someone's wondering why I'm making (and eating) cake for the fourth time in a week, I've only got to say it's for the blog! and all is forgiven.

A similar excuse applies when it comes to birthdays...

Easy Gluten Free Chocolate Swirl Cheesecake with Brownie Crust - gluten free, baked cheesecake, dessert

You see, I may not like celebrating my own birthday (I'd much rather celebrate everyone else's), but I do love cake - so each year I make it my mission to come up with something delicious.

This year, we had friends over for dinner on the Friday before my birthday and I decided I needed a pre-birthday cake - and thus this recipe was born.

You see, I asked Jesse what kind of cake he'd like me to make and (as to be expected) cheesecake, his favourite dessert.

But whilst I love cheesecake, it just doesn't have enough chocolate (or any chocolate at all) - so that needed to change.

Easy Gluten Free Chocolate Swirl Cheesecake with Brownie Crust - gluten free, baked cheesecake, easy dessert recipes

Enter the ultimate chocolate swirl cheesecake. With a rich chocolate brownie based and swirled vanilla and chocolate cheesecake topping, it's a chocolate lover's delight you won't be able to stop thinking about.

And if you don't love chocolate?

Ermm... I'm sorry. I guess we can only be friends because I'll get to eat your share 😉

So let me share the recipe with you! >>

To be honest, I’m not really sure what to call this recipe other than delicious.

A cross between crackers and savoury cookies, they’re the ultimate recipe to make when you have guests coming over as they’re seriously impressive and seriously easy to make.

I mean, really, when you come out with a tray of homemade cheese crackers, you’ll be giving off some serious Martha Stewart vibes (minus the ankle bracelet and parole officer).

Fresh from the oven, they’re crisp and crunchy with light, pillowy layers. After they’ve been sitting in a container, they tend to soften up a little, but are quickly re-crisped with a few minutes in the oven.
