Recipe: Raw Gingerbread Cookie Bites

Raw Gingerbread Cookie Dough Bites - Vegan, Raw, Gluten Free

Phew! What a month August is turning out to be! I have been run off my feet with something planned every single day for the month of August! We're 52 days away from the big day and I'm trying to handle wedding plans, work and the blog simultaneously. It's a bit of a juggle, but I'm rocking it ;) 

With this month being so busy, I've hardly been able to bake or cook for fun - the most time I've spent in the kitchen was preparing for our wedding shower - I've even run out of breakfast bakes and am having serious withdrawals! 

That said, I'd run out of snacks and wanted to make something that was quick, easy and delicious. We're still loving our raw bites - and still making jokes about them - and I had a jar of Ginger People Organic Minced Ginger that I wanted to use so I decided that the quickest and easiest thing to make was some raw bites - and gingerbread raw bites at that! 

I like to keep them in the fridge or freezer so they're kind of chewy. If you keep them in the freezer, you'll want to let them sit out for a minute or two before biting into them as you might break your tooth - and I don't think anyone wants that! 

Even though these raw balls bites are the subject of many of our jokes we all love them - they're quick to make, easy to eat, filling and delicious! 

Gingerbread Cookie Raw Balls - Vegan, Gluten Free, Sugar Free

Raw Gingerbread Cookie Bites makes 6-10 bites, depending on size 
gluten free, raw, clean eating friendly, vegan 

2/3 cup dates 
1/2 tbsp Ginger People Organic Minced Ginger 
1/2 tsp mixed spice (use more/less depending on your spice preferences) 
1/2 cup almonds 
1/4 cup pecans (or walnuts) 
1/4 cup oatmeal 
1-2 tbsp water, as needed 


In a food processor, first chop up your dates. 
Add in your oats, almonds, pecans, ginger and spices and process until the mix begins to form a "clump". 
If your mix is too try, simply add in some water - just a couple of drops at a time. 
Form into ball shapes and place into a container to chill. 
Eat within a week, stored in the fridge or store in the freezer to keep for longer. 

Note: whilst these are healthier than regular cookie dough - they're still energy dense as all raw treats are so keep this in mind! We usually make the mix into 6 larger bites and have one bite as a snack - they're way more filling than you'd think!

  1. my fave kind of cookie is raspberry and white choc... if only there could be a healthy version haha! that being said, is it possible to see raw bite recipe which includes some fruity flavours?

    1. Thank you so much! I will definitely be making some coconut bites - I'm on the hunt for some unsulphured coconut so I can eat them (as I'm allergic to sulphur) but I will definitely make them regardless as I don't think Jesse will whine if he has to be the taste tester ;)

  3. These sound delicious! I made chocolate & ginger raw balls, er AHEM, "bites"!, a few months ago and they were awesome, so I can imagine how amazing these gingerbread ones must taste. Definitely going on my to-make list! :)
