Recipe: Apricot and Date Triple C Bliss Balls (Gluten Free & Vegan)

Apricot and Date Triple C Bliss Balls Recipe - gluten free, vegan

Apricots, Dates, Cashews, Chia Seeds and Coconut combine to create these delicious bliss balls that are raw, vegan, paleo, gluten free, grain free and refined sugar free. A great healthy snack recipe.

Generally speaking, you'll find me making different on-the-go snacks so I can quickly grab something on my way out the door.

But living in Sydney lockdown? You'll find me filling my fridge with these same snacks so that we always have healthy and nutrient packed options close at hand.

Because let's be real, when you're stuck at home and there's chips and candy and junk food, you've got to make sure the healthy stuff is just as easy.

These Apricot and Date Triple C Bliss Balls are my current fave.... so much so that I don't think the name does them justice.

As well as apricots and dates, these bites are filled with cashews, coconut and chia seeds. All of these ingredients together create a taste and texture sensation and a healthy treat that feels indulgent.

Who needs candy when you can enjoy nature's candy instead?

Recipe: The Ultimate Chocolate Cake with Sour Cream Frosting (Gluten Free!)

The Ultimate Chocolate Cake Recipe with Sour Cream Frosting Gluten Free

With a creamy sour cream chocolate frosting and a fudgy gluten free chocolate cake, this easy recipe really is The Ultimate Gluten Free Chocolate Cake Recipe. Perfect for birthday parties, holidays, celebrations, anniversaries or any moment that could be enhanced with cake!

Sometimes you're in lockdown and stuck at home with nothing to do and you suddenly decide you need to bake a cake.

So you pull the mixer down from the cupboard, set it up on the bench, get out all of the ingredients, preheat the oven, bake said cake and then decide it needs a magnificent frosting.

Only, you don't have that much butter, there's no cream or cream cheese in your fridge and you don't want to go to the grocery store in the middle of a COVID flare.... so you reach for the sour cream instead.

And you know what? Sometimes those last minute recipes turn out to be the best ones.

This chocolate cake is seriously good. It's rich and fluffy with a creamy, decadent frosting. You'd never know it uses sour cream (and if your fridge has no sour cream but you do have cream cheese, you can swap it for that!).

Smother it with sprinkles, cover it with smarties or your favourite lollies, let the kids get creative - the choice is totally yours.

But trust me, this pandemic chocolate cake is totally worth making.

So let me share the recipe with you >>

Recent Things: Lockdown Baking, Crafting and Reno To-Do Lists

Recent Things in the Southern In Law World

Why hello there! Happy Friday that kind of feels like every other day because we're still in lockdown in Sydney 😜

I've missed a few Recent Things post because we haven't really been doing much of anything. Both Jesse and I have been working from home, avoiding people and maybe getting to the grocery store once a week and that's it.

In our spare time we've just been hanging out, baking, watching TV, feeling this wiggly little human inside me kick about (so fun!) and trying to get whatever reno bits and pieces we can without having to make a trip to Bunnings.

But let me catch you up on the last few weeks >>
