Gluten Free Hummingbird Cake Recipe

Easy Gluten Free Hummingbird Cake Recipe

This Gluten Free Hummingbird Cake Recipe is easy to make and absolutely delicious. Made in one bowl without a mixer, this simple recipe is perfect for afternoon tea or dessert. Lower in fat and sugar than traditional recipes, it's perfect for sharing with the whole family.

Why hello there, long time no speak... if you follow me on Instagram, that statement is certainly not true because I'm always posting there... but the blog has been very neglected lately as I'm constantly chasing a very cute 2 year old around - and even when I am making new recipes, they're usually quickly gobbled by said 2 year old before a photo is even thought of.

But, this Gluten Free Hummingbird Cake Recipe is too good not to share, so here I am, just like old times, sharing a delicious gluten free recipe with you.

Recipe: BLW Banana French Toast (Gluten Free and Added Sugar Free)

Baby Led Weaning Banana French Toast Sticks Recipe Gluten Free - Easy baby and toddler breakfast ideas

Perfect for babies and toddlers, this BLW Banana French Toast Sticks Recipe is gluten free, quick, easy, healthy, refined sugar free and absolutely delicious!

Before you go thinking I'm some kind of super mama that is baking french toast first thing in the morning, think again.... because this is one of my go-to meal prep recipes to have as a quick breakfast (or lunch!) option for Jensen.

If you've got time/energy in the morning, it's simple enough to make right away - but if you're like me and don't, it's the perfect meal prep recipe to make, freeze and reheat.

These Banana French Toast are one of Jensen's favourite breakfast options - and were especially a hit when he first started solids as he loved feeding hinself.

Served up with some yogurt and nut butter, it's a delicious easy breakfast with some added nutrients from flaxseeds and hemp seeds. Of course, when you're first starting solids be sure to try all of the different allergens separately, as this recipe combines many of the major allergens.

POST BREAK FOR THE CUTEST THROWBACK PHOTO EVER 😍

This was the first time I made these banana french toast sticks for Jensen.

But it's not just for babies! Whilst this banana french toast is perfect for baby led weaning, it's a delicious breakfast recipe with no added sugar that the whole family will enjoy.

Serve it with yogurt and a side of fruit, dip it in peanut butter or maple syrup, drizzle over nutella for something decadent - the choice is yours!

Recipe: 2 Ingredient Sweet Potato Scrolls (Gluten Free & Vegan, BLW Friendly)

Two Ingredient Sweet Potato Scrolls Recipe - gluten free cheesymite scrolls recipe

This is a paid advertisement for ALDI Australia as part of their #ALDIBackToSchool campaign. #ad

It’s no secret that back to school expenses can add up quickly.

You’ve got uniforms, shoes, books, lunchboxes, drink bottles, school fees, hair cuts, grocery bills to restock the pantry.

So naturally, when ALDI asked if I would help create some Back to School Inso for them, I knew I had to come up with some simple back to school recipes that were quick, easy, kid friendly and budget friendly too.

Two Ingredient Sweet Potato Scrolls Recipe - gluten free cheesymite scrolls recipe

This recipe cost less than $10 for all of the ingredients, making 12 scrolls with plenty left to make a second batch.

Better still? It’s gluten free, nut free and egg free and can also be vegan and dairy free too.

Recipe: Tahini Chocolate Chip Cookies (Gluten Free)

Easy Gluten Free Tahini Chocolate Chip Cookies Recipe - crisp and chewy cookies

Crisp and chewy, this Gluten Free Tahini Chocolate Chip Cookie Recipe is addictively delicious and so easy to make. Roasted sesame creates a moreish tasty cookie that everyone will love and uses up the last of the tahini jar.

You might be thinking... "tahini? cookies? why?!" but stick with me and you'll discover the most addictively delicious cookies you've ever tried.

With the perfect balance of salty and sweet, these cookies are so moreish and so delicious - and also so easy to make.

Better still, they'll use up that tahini jar you have floating around in your pantry that you never seem to have enough uses for.... even if it's the bottom of the jar and a mix of dry clumpy bits and properly stirred tahini (which is likely if you're like me and too lazy to fully stir the jar every time you use it).

Easy Gluten Free Tahini Chocolate Chip Cookies Recipe - crisp and chewy cookies

The roasted sesame flavour adds that extra oomph to these cookies without being too overpowering. It's the secret ingredient that will have everyone coming back for more and asking for the recipe.

The edges are crisp and crunchy whilst the centres are soft and chewy with melting gooey chocolate chips.

I mean, seriously. Can you ever go wrong with a chocolate chip cookie?

Recipe: BLW Friendly Weetbix Banana Muffins (Gluten Free and Sugar Free)

BLW Friendly Weetbix Banana Muffins Recipe Gluten Free

A baby led weaning friendly recipe, these Weetbix Banana Muffins Recipe is sugar free, gluten free and so easy to make. A BLW fave that babies, toddlers and the whole family will love.

Life with an eight month old is hectic

With Jensen now on a mission to walk, he's climbing everything he can which means I can't take my eyes off him for a second.

My beautiful shaker door cabinets have become finger holds for a baby who seems to think he's some kind of daredevil free climber. If he's not climbing, he's crab crawling through the house at lighting speed, untying shoelaces or chasing toys around.

And if he's not on the move, he's probably eating because oh boy does this kid love his food!

Gluten Free BLW Muffin Recipes Weetbix Banana Muffins Recipe

Muffins have become a recent favourite - both as entertainment (Jensen is fascinated with watching me cook) and as a snack and they've been perfect for taking with us on the go. From the zoo to the shopping centre and soon to be taken with us on our vacation, these muffins are the perfect portable snack for both baby and Mum and Dad.

As a baby friendly recipe, they don't contain any added sugars - but you could easily add some sweetener (maple syrup or sugar) if you have an older baby or just want a sweeter muffin.

Best of all, these muffins use up the weetbix crumbs you get at the bottom of the box - and are great if, like us, you only have one weetbix eater in the family and want to use them up before they go stale.

Gluten Free BLW Recipes Weetbix Banana Muffins Recipe Sugar Free

We use gluten free weetbix for these muffins so that I can eat them to, but you can just as easily use regular weetbix.

The recipe is also super adaptable. We add chia seeds, flaxseeds and almond meal to ours, but you can swap that out for more flour or mix through hemp seeds, raisins or whatever you like.

So let me share the recipe with you! >>

Recipe: Easy Gluten Free Snickers Cookies (Crisp and Chewy!)

Easy Gluten Free Peanut Butter Snickers Cookie Recipe

Crisp and chewy Gluten Free Peanut Butter Snickers Cookie Recipe, aka Naptime Cookies. Baked in just 10 mins with less than 10 minutes prep, these quick and easy cookies are perfect for busy families and absolutely delicious. Made using pantry staples and ingredients you probably already have at home!

Oh hello there! Yes, I am actually alive…. the bags under my eyes would probably rack up a hefty excess baggage charge on a long haul flight and my to-do list is a million miles long - but I am indeed alive…. and I’ve come back with a recipe!

Remember those?

Since Jensen was born, I’ve been quiet on the recipe front. I’ve still been cooking, but it’s mainly been breakfasts, lunches and dinners. The only baking I’ve really done has been a birthday cake, some cupcakes and batch after batch of boobie bikkies.

Easy Gluten Free Peanut Butter Snickers Cookie Recipe

Instead my days have been filled with juggling working full time, looking after a very active 6 month old and trying to stop my house from looking like a total dump. That doesn’t leave much time for baking.

But these cookies are worth the effort - and they’re so quick they can be made during nap time…. even if your little one is a cat napper like Jensen can sometime be.

They need 10 minutes of prep and 10 minutes in the oven and you’ve got a batch of delicious cookies ready to devour.

What’s not to love?!

So let me share the recipe with you >>

Recipe: Gluten Free Gingerbread Blondies

Easy Gluten Free Gingerbread Blondies Recipe - christmas dessert ideas, easy recipes, gluten free gingerbread cookie bars with white chocolate chips

Blondies get a Christmas makeover with this Easy Gluten Free Gingerbread Blondies Recipe. With all of the flavours of gingerbread in a chewy white chocolate chip studded blondie, these are sure to be a holiday hit!

Is anyone else finding themselves slowly transforming their house into Christmas mode?

Whilst usually I'd get everything done in the one weekend, we're still working on some home to-dos before baby arrives - and at 9 months pregnant, I totally don't have the energy to decorate our house all in one go - so Christmas is slowly starting to appear.

One tree is up, another two are going up today, the lounge room is decorated and our kitchen has a sprinkling of Christmas magic too.... but most importantly, Christmas scents have been filling our house with treats baking away in the oven.

Easy Gluten Free Gingerbread Blondies Recipe - christmas dessert ideas, easy recipes, gluten free gingerbread cookie bars with white chocolate chips

With a newborn arriving in just two weeks, I don't know how much time (or energy) i'll have for Christmas baking, so I've been baking and enjoying Christmas treats while I still can!

These Gingerbread Blondies are a new favourite we've been enjoying with a cup of coffee. They have just the right amount of sweetness, are full of Christmas flavour and are dense and fudgy like any good blondie should be.

Better still? You can totally make the recipe your own. Throw in nuts or stir through chocolate chips (just don't make the mistake I did with the last batch and stir them through when the mix is too hot - notes below!) or frost them with your favourite frosting and Christmas sprinkles.

But let me share the recipe with you! >>

Even though the ingredients and recipe is super simple, they taste seriously impressive - and can be adapted to add in whatever mix ins you fancy.

Throw in some chocolate chips or chopped nuts, chop up some candy bars or drizzle over caramel sauce before baking - the choice is yours!

Recipe: Chocolate Gingerbread Cookies (Gluten Free & Vegan)

Gluten Free Chocolate Gingerbread Cookies Recipe - Vegan Christmas Cookies, Small Batch

Combining traditional gingerbread flavours and rich chocolate, this Easy Chocolate Gingerbread Cookies Recipe will become a new family fave - and it's gluten free, egg free and vegan too! Makes a small batch that is perfect for Christmas gifting.

It's beginning to look a lot like Christmas....... especially in our home!

You see, once November rolls around, I decide it's officially a-okay to begin celebrating Christmas. The cookies baking in my oven are most likely Christmas cookies, Alexa is playing Christmas radio, the Christmas decorations start appearing and we are in full on holiday mode.

So I thought I'd kick off November's recipes with a Christmas themed one - and what better recipe that one that combines Christmas spices AND chocolate!

Gluten Free Chocolate Gingerbread Cookies Recipe - Vegan Christmas Cookies, Small Batch

I love gingerbread cookies, but chocolate gingerbread cookies are next level delicious.

Filled with all of the traditional spices but with a sweet chocolate kick, these are one of my favourite Christmas cookies - and they're so easy to make!

The recipe makes a smallish batch, but be warned that you might find yourself doubling or tripling the measurements because these cookies will disappear before your eyes!

Gluten Free Chocolate Gingerbread Cookies Recipe - Vegan Christmas Cookies, Small Batch

Don't love gingerbread or cinnamon and ginger spices? You can make chocolate cookies by leaving the cinnamon and ginger out altogether. Instead of a spicy kick, you'll have a sweet chocolate cookie that kids and adults will adore.

I keep things simple by drizzling these with chocolate, but you could easily decorate them with icing, sprinkles or whatever takes your fancy.

Recipe: The Best Shortbread Thumbprint Cookies (Gluten Free and Egg Free!)

The Best Gluten Free Thumbprint Cookie Recipe - Gluten Free Jam Drop Shortbread Cookies Recipe

You would never guess these Melt in Your Mouth Shortbread Thumbprint Cookies were so easy to make, nor gluten free and egg free! A delicious shortbread/jam drop cookie with a crunchy sugar crust and strawberry jam filling. 4 Ingredient Recipe!

I know that it's only October, but I'm in a Christmas baking mood already.

You see, during lockdown I haven't really felt like baking at all (especially because it's just the two of us at home), but all of a sudden, I want to bake ALLLLL the Christmas cookies.

So I've started with the Christmas Cookies that could pass as "regular" cookies - and to be honest, I might have started with the best ones.

The Best Gluten Free Thumbprint Cookie Recipe - Gluten Free Jam Drop Shortbread Cookies Recipe

Thumbprint Cookies are always a favourite of ours. They're buttery and melt in your mouth and have sweet, chewy jam filled centres - but I have a little secret that makes them even better.

You see, these shortbread cookies are soft and fluffy - but they're dipped in sugar before baking to give them the perfect amount of crunch.

I've also got a little trick for perfectly baked thumbprint cookies without overbaking the jam - because no one wants jam filled cookies that are dry or burnt.

So let me share them with you >>

Recipe: Easy Two Bite Double Chocolate Brownies (Gluten Free!)

Easy Two Bite Gluten Free Brownies Recipe - Double Chocolate Brownie Bites Recipe

Using ingredients you already have at home, this one bowl Easy Two Bite Double Chocolate Brownies Recipe takes just one bowl and is SO quick and easy to make. A new family fave.

Sometimes the best recipes are the simplest ones.... and the best recipes are the ones you make again, and again, and again

This is one of those recipes.

These two bite recipes are SO easy to make, but they're one of our all time favourites. All you need is one bowl and about half an hour of your time and you've got a whole batch of delicious brownie bites to devour.

Easy Two Bite Gluten Free Brownies Recipe - Double Chocolate Brownie Bites Recipe

During lockdown we haven't been doing too much baking because it's just the two of us at home.

A batch of cupcakes would easily be wasted, a batch of cookies often feels too large and an entire cake feels too indulgent - but a batch of two bite brownies? Sign us up!

These brownies keep really well in a container at room temperature (they've lasted almost a week before we finished them off!) and they also freeze really well so you have a quick dessert or snack to defrost and enjoy.

Better still? They use ingredients you probably already have at home!

So let me share the recipe with you >>

Recipe: Air Fryer Cheezy Herb and Garlic Roasted Chickpeas (Gluten Free & Vegan!)

Air Fryer Cheesy Herb and Garlic Roasted Chickpeas Recipe - gluten free and vegan

Crunchy and delicious, this Air Fryer Cheezy Herb and Garlic Roasted Chickpeas Recipe is the perfect healthy crunchy snack. Nutritional yeast adds a nutrient kick and cheesy taste to this gluten free, vegan, low fat and grain free snack.

What's one thing you'll always find in your pantry?

At our house, you're always guaranteed to find canned beans, canned tomatoes and chips. Canned tomatoes and beans because we're always using them in recipes - and chips because Jesse cannot go a day or two without them 😅

But sometimes you want a healthier snack than chips - and that's where this recipe comes in.

Even my chip addict of a husband loves them and they're jam packed full of nutrition. What's not to love?!

So let me share them with you! >>

Recipe: Chocolate Coconut Bliss Balls (Gluten Free & Vegan)

Chocolate Coconut Bliss Balls Recipe - coconut rough raw bites recipe, raw bounty bar balls

A healthy chocolate treat, this Raw Chocolate Coconut Bliss Balls Recipe is like a healthy coconut rough or bounty bar without any of the added sugar. Gluten free, vegan, grain free, egg free and paleo friendly.

I'm one of those people who doesn't know how anyone could "forget to eat".

You know the people, 2pm rolls around and they realise they've not eaten a single thing all day long.

That is not me.

Chocolate Coconut Bliss Balls Recipe - coconut rough raw bites recipe, raw bounty bar balls

As soon as I'm awake, you'll find me sleepily making my way down to the kitchen, flicking the kettle on and grabbing some breakfast - and as Jesse will tell you, I don't really stop eating until I go to sleep 😜

Having healthy snacks on hand is a must from me, meaning that I can always have something nutritious to grab and snack on - and bliss balls are one of my favourite healthy snacks.

Easy to customise with flavours you love, these bites take just a few minutes to make and can be kept in the fridge or freezer for a quick snack.
