Life with an eight month old is hectic

With Jensen now on a mission to walk, he's climbing everything he can which means I can't take my eyes off him for a second. 

My beautiful shaker door cabinets have become finger holds for a baby who seems to think he's some kind of daredevil free climber. If he's not climbing, he's crab crawling through the house at lighting speed, untying shoelaces or chasing toys around.

And if he's not on the move, he's probably eating because oh boy does this kid love his food!

Gluten Free BLW Muffin Recipes Weetbix Banana Muffins Recipe

Muffins have become a recent favourite - both as entertainment (Jensen is fascinated with watching me cook) and as a snack and they've been perfect for taking with us on the go. From the zoo to the shopping centre and soon to be taken with us on our vacation, these muffins are the perfect portable snack for both baby and Mum and Dad. 

As a baby friendly recipe, they don't contain any added sugars - but you could easily add some sweetener (maple syrup or sugar) if you have an older baby or just want a sweeter muffin.

Best of all, these muffins use up the weetbix crumbs you get at the bottom of the box - and are great if, like us, you only have one weetbix eater in the family and want to use them up before they go stale.

We use gluten free weetbix for these muffins so that I can eat them to, but you can just as easily use regular weetbix. 

The recipe is also super adaptable. We add chia seeds, flaxseeds and almond meal to ours, but you can swap that out for more flour or mix through hemp seeds, raisins or whatever you like.

Often times, when people have seen my blog they'll ask me "How do you find the time to bake" and the answer is more often than not, I don't. 

I'm not trying to be clever and say "you don't find time, you make time" blahblahblah. Because unless someone can figure out how to make 5 extra hours in a 24 hour day, I'm going to say that's false. 

You see, sometimes life just gets so busy that I don't have the time or energy to bake - but then there's those times where I don't have the time or energy but either really want to eat something homemade or have to bake something to bring somewhere/share with people - and then I have to get creative.

These donut muffins are one of those creations. They take literally minutes to make from start to finish and are seriously, ridiculously good. I've kept the recipe as a small batch recipe as that's what we usually make (12 mini muffins), but it's easy to multiply and share with a crowd. 

This is one of those recipes that's best eaten on the day they're made (especially when they're still warm), but they will keep in a container for 2-3 days and you can simply re-dip them in the leftover cinnamon sugar when you're ready to eat them.

All you have to do is make them one time and you can freeze them to defrost and eat later. They're perfect for school lunchboxes for kids or work lunches for adults. I like to add mine to my bento boxes instead of a sandwich. My current favourite bento box combination? These muffins, nuts, roasted chickpeas and fresh fruit.

Just really delicious food. 

Because I don't want you to see a photoshopped recipe, make it yourself and then think WHAT THE HECK HAVE I CREATED?!?! When it actually looks the way it should.

But I promise you, these muffins aren't actually gerbils.. or supermodels - but they are really, ridiculously delicious.

They'll be a darker brown on the outside and kind of ugly - but it will be love at first bite.

It's that time of year... 

I find myself playing Christmas music while I work...

Christmas is coming and I cannot wait. 

Not for the presents - but for family and celebrations and food. I think Christmas food has to be my favourite cuisine (that's got to be a cuisine, right?!). Especially those foods you'll find on the dessert table. 

Cakes and muffins and cookies and puddings filled with warming spices, chocolate and peppermint treats in abundance. There's nothing better than Christmas desserts - and I knew exactly what kind of treat I wanted to start my Christmas baking with: the simplest one.

I love muffins. They're no fuss, easy to make, easy to store and freezer friendly so you can make a big batch and freeze them to defrost and enjoy later. 

My first foray into muffin making as a child was using packet mixes. My Mum wasn't a baker so the only baking I tended to do involved packet mixes until I learnt how to bake myself. 

I can remember baking blueberry muffins with cans of blueberries that came with the packet. Carefully draining the bright purple juice without getting any on my clothes. 

But today? The only muffins I make are from scratch - and I pinky promise you they're just as easy - if not easier than a packet mix.

You need just one mixing bowl to make these muffins and after throwing all the ingredients together - all you've got to do is wait for them to bake. 

The hardest part of the whole recipe is having the patience to let them cool... but let's be real... there have been plenty of times where I've scooped them out fresh from the oven, not caring that they broke up a little bit because they were going straight into my mouth.

Judge me all you want, friends... I am sure once you smell these baking you'll do the same.

Recipe: Fluffy Ricotta Banana Muffins (Gluten Free!)

I hate wasting food. I know how lucky we are to have an abundance of food to eat and money in our bank accounts to buy it and I don't take that for granted. 

One of the easiest ways I've found to avoid waste is to be creative - and this is one of those recipes I've created when I didn't want something to go to waste - only now it's become more of a reason to have extra ricotta!

These Banana Ricotta Muffins are full of flavour and they're soft, fluffy and oh so delicious. The first time I made them, it was to use up the other half of the container of ricotta I had left over from making this Healthy Chicken and Ricotta Lasagna Recipe - as well as some brown spotty bananas that had been neglected in our fruit bowl.
