This is that cookie. 

It's flourless, takes just minutes to mix together, 10 minutes to bake and leaves you with the most decadent, chocolate-filled cookie you will ever taste. But be warned... you may find yourself with a new addiction.

They're chewy with crisp edges and melt-in-your-mouth chocolate chips - and the kind of cookie that will leave everyone thinking you're a domestic goddess, even though the recipe only took 4 ingredients and less than half an hour of your time.

Best of all? They're totally customisable to your tastes. Swap the white chocolate chips for milk or peanut butter chips, swap them for nuts or dried fruit or chunks of your favourite chocolate bar or leave them out all together - the choice is yours.

Easy Flourless Double Chocolate Cookies

ingredients:

  • 2 cups (200g) icing sugar/confectioner's sugar, sifted 
  • 1/2 cup (50g) cocoa powder
  • 2 egg whites 
  • 2/3 cup (115g) white chocolate chips*

instructions:

How to cook Easy Flourless Double Chocolate Cookies

  1. Preheat oven to 180C/355F. 
  2. Line 4 baking sheets with baking paper and set aside.
  3. In a mixing bowl, add your sifted sugar, cocoa powder and egg whites and mix until combined.
  4. Stir through your white chocolate chips, mixing until everything is incorporated.
  5. Spoon your mixture onto your prepared baking sheets, leaving room for your cookies to spread. The mixture will look quite thin and odd (not at all like regular cookie dough) but it will work! 
  6. Continue until all of your mix is on your baking sheets. I add 3-4 cookies to each sheet. 
  7. Bake your cookies for 10-12 minutes or until the cookies crack and the edges have started to firm up. The cookies will firm up more as they cool. 
  8. Leave your cookies to cool completely on your baking sheet before removing them and eating! 
  9. These cookies will keep for 2-3 days in an airtight container. They can also be frozen once cooked to defrost and eat later!

NOTES:

*Feel free to swap the white chocolate chips for whatever mix ins you prefer - or leave them out altogether.
