Recipe: Banana Oatmeal Cookies (Or Banana Bread Cookies!)

Healthy Banana Oatmeal Cookies - gluten free, low fat, vegan

You know what, I've discovered the guy I'm marrying (in 36 days!) is totally weird. Actually, that's a lie, I've always known he was weird... (you just have to look at Jesse kung fu fighting in this GIF). 

Why is Jesse weird, you ask? Well, yesterday he came home to find me mmm-ing and yummmm-ing over these cookies and our conversation went like this; 

Jesse: "what are they? the smell good"
Kristy: "banana bread cookies, they're good"
Jesse: "Kristy, that's just wrong" 
Kristy: "what?!?!?!" (continues eating cookie) 
Jesse: "you either make banana bread or you make cookies - you can't mix both.... that's just.... weird". 

But, that's not too bad of a situation because he didn't want to try the cookies, so there were more for me. Then I called them banana oatmeal cookies and he ate them. This is the same with dinner - if I call something "Taco pasta" it's weird because it's not tacos (even though it uses the same flavours/ingredients) but if I call the same pasta "Mexican Pasta" it's delicious. 

So, whether you want to call these cookies Banana Bread Cookies or Banana Oatmeal Cookies is up to you - but as long as you call them delicious, we're all good ;) 

Healthy Banana Bread Cookies - gluten free, low fat, vegan

Banana Oatmeal Cookies makes 12-18 cookies 
gluten free, low fat, vegan option, sugar free

30g/2 tbsp coconut oil (I used Cheap Superfoods' Organic Coconut Butter)
1/4 cup honey* 
1/4 cup egg whites or 1/4 cup applesauce 
1 tsp vanilla 
1 large banana, mashed
2 cups rolled oats
1 cup gluten free plain flour/plain flour/wholewheat flour 
1 tsp baking powder
1 tsp baking soda 
Optional: chocolate chips, spices, nuts, etc. 

Preheat oven to 170°C/340°F. 
Melt your coconut oil and mix with honey, egg whites/applesauce, mashed bananas and vanilla. 
Mix in your dry ingredients, stirring until just combined. 
Spoon onto baking trays (about a heaping tablespoon of mix for each cookie) and slightly flatten. 
Bake for 10-15 minutes or until lightly golden. 
Leave to cool before devouring. 

*If you like things sweet, you may want to add more.
Important note: don't do what I did yesterday and grill your cookies instead of bake your cookies - hence why my cookies are looking a little extra crunchy in these photos. (Damn oven with it's silly dials!)

  1. LOL that's just wrong...:P so funny! Although I do love me a goooooood cookie, I have always loved cake (or anything cake-y) way too much! So much so that my sister remembers me as a child wanting to crash on bday parties just for the cake. Umm kind of sad if you ask me, hehe.

    1. Oh that is too funny! I used to hate cake as a child (weird kid I was) as I didn't like frosting at all. Everyone always had awful tasting frosting that tickled my throat - and then my mum one day made frosting using non-dairy butter and less sugar and I was hooked ;P

      I'm not sure about the nutritional counts as it really depends on your individual ingredients - you might be able to find someone on Pinterest who has worked them out though!
