Recipe: Apple Pie Raw Bites (Paleo and Vegan)

You know what I've realised lately... I'm seasonally confused.

Being married to an American and having friends all over the globe will do that to you. You see, it's Spring in Australia (though... with torrential rain yesterday and not-so-nice temps you wouldn't really know that) and here I am sharing an Apple Pie inspired recipe with you. 

Why? Because we're currently planning our Thanksgiving menu for this year which then got me thinking about pies which then made me realised I'd never shared this delicious raw bite recipe with you.

So what did I do? I literally dropped what I was doing to make them and photograph them for you. 

Let's not mention the fact that it had a lot to do with procrastination... but hey! You get to reap the benefits of my procrastination.

These bites are full of flavour and texture with chewy dried apples, caramel-like dates, crunchy nut pieces and warming cinnamon and spices. 

But that's where my seasonal confusion also comes in... because I've been eating these babies straight from the freezer. Oy vey, friends. 

But whatever temperature you eat them at, I promise they're delicious
So let me share the recipe with you! >> 



Healthy Apple Pie Raw Balls Recipe - raw bites, vegan, paleo, grain free, gluten free, sugar free, healthy snack, clean eating recipe, energy bites

Vegan Apple Pie Energy Bites Recipe
gluten free, vegan, egg free, dairy free, sugar free,
clean eating recipe, grain free, paleo, raw
makes 12 small bites 

2 cups (160g) dried apple rings/pieces
1/2 cup (85g) dates (fresh or dried dates both work) 
1/2 cup (60g) walnuts 
2 tsp cinnamon
Pinch of salt 
  • In a food processor, process your dates and dried apple until finely chopped. This will take a few minutes but they will break up! 
  • Once your apple and dates are chopped, add your walnuts and cinnamon and process until your mix begins to clump together. If needed, add a drop or two of water to bring your mix together, however, be sure not to add too much water or they'll get sticky.
  • Roll your mix into balls, using about 1 tbsp of mix at a time. 
  • Repeat until all of your mix is rolled and enjoy!
  • These bites will keep in the fridge in an airtight container for up to a month or can be frozen to defrost and enjoy whenever you like.
