Every single year around this time, I have a bit of a problem... 

You see, whilst we live in Australia that is slowly heading towards Spring, we have so many friends and family members in the US who are racing towards pumpkin spice season... oh wait, I mean fall ðŸ˜‰

Pumpkin spice isn't really a thing in Australia, but usually we're in the US around this time and it's hard to find anywhere without a pumpkin spice something. Pumpkin spice lattes, pumpkin spice bagels, pumpkin spice peanut butter - even pumpkin spice M&M's. 

Sooooo, what's an Australian girl to do when she wants in on the pumpkin spice action?

Gluten Free Pumpkin Spice Baked Donuts

ingredients:

For the Donuts
  • 3/4 cup (90g) gluten free plain flour 
  • 2 tsp baking powder 
  • 1 tsp cinnamon 
  • 1/4 tsp mixed spice*
  • 1/4 tsp nutmeg*
  • 1/3 cup oil or melted butter
  • 1/3 cup milk 
  • 3/4 cup pumpkin puree (canned or made fresh by pureeing steamed pumpkin) 
  • 1/2 cup (100g) sugar** 
  • 1 egg 
For the Cinnamon Sugar Coating
  • 1/4 cup (50g) sugar***
  • 1 tsp cinnamon 

instructions:

How to cook Gluten Free Pumpkin Spice Baked Donuts

  1. Preheat your oven to 180C/355F. 
  2. Grease a donut pan and set aside.
  3. In a mixing bowl, sift in your flour and add all of your remaining ingredients. 
  4. Mix until just combined and spoon your donut batter into your prepared tins, filling about 3/4 full (if you cover the centre of the donut, you'll end up with no donut hole on one side, so fill them to just below that point). 
  5. Bake for 12-15 minutes or until cooked through. 
  6. Allow to cool before coating in your cinnamon sugar mixture (see notes if sugar doesn't stick). 
  7. Enjoy immediately or keep in an airtight container at room temperature for 2-3 days. These donuts can also be frozen once cooked to defrost and eat later.

NOTES:

*If you have a pumpkin pie spice mix, swap the nutmeg and mixed spice for 1/2 tsp pumpkin spice mix.
**You can use coconut sugar or brown sugar in the donut mix. Both work perfectly!
***I prefer to use caster sugar/superfine sugar or white sugar to coat my donuts in as I find that coconut sugar melts into the donuts. If your sugar mixture isn't sticking to your donuts, you may need to lightly brush them with oil or melted butter before coating them with sugar.
