Sometimes the simplest recipes become your favourite - and this is definitely one of those recipes. 

Bliss Balls are one of my favourite healthy snacks to have on hand - and they're also one of my favourite healthy desserts to share with friends. Not only are they super simple to make, they're seriously delicious - and I've found that even the pickiest eaters love them. 

I first made this recipe when we were having friends over for lunch who had a variety of different dietary needs and I needed a simple (but healthy and allergy friendly!) dessert that everyone could enjoy.

So, I made a few batches of different bliss ball flavours (including this one), put together a fruit platter, added some chocolate and the bliss balls and everyone dug in!

Copycat Coconut Chocolate Chip Larabar Bliss Balls

ingredients:

  • 1 1/2 cups (255g) pitted dates*
  • 3/4 cup (75g) shredded coconut 
  • 1/2 cup (70g) raw almonds 
  • 1/2 cup (70g) raw cashews
  • 1/3 cup (50g) chocolate chips - optional but recommended
  • Pinch of salt 

instructions:

How to cook Copycat Coconut Chocolate Chip Larabar Bliss Balls

  1. Add all of your ingredients except the chocolate chips to a food processor and process until your mix resembles coarse breadcrumbs and no large chunks remain. 
  2. Try pinching your mix together and if it pinches and holds together, you're good to go - otherwise, start your food processor again and add a few drops of water until your mix clumps together. 
  3. Stir through your chocolate chips and roll your mix into balls. 
  4. These balls can be kept in the fridge in an airtight container for up to a month or can be frozen to defrost and eat later.

NOTES:

*I use dried dates instead of medjool dates for this recipe. Both will work, but dried dates will need a few drops of water to bring the mix together.
