When my brain has an overflowing to-do list constantly running through it, my kitchen creativity is at an all time low and I can often be found in the supermarket staring blankly at vegetables wondering what on earth I should cook for dinner.

But that's where meal prep comes in handy.

Our freezer is constantly packed full of prepped meals for quick and easy work lunches or dinners when we need something fast - but don't have the time to think about what to cook, or even the time to cook it. 



This recipe is one of those meal prep recipes. I've been making it in a big batch to freeze in slices for a quick work lunch or dinner, served alongside a quick salad.

It's simple, easy, protein packed and seriously delicious.

Easy Gluten Free Spanish Style Impossible Pie Recipe | The perfect healthy meal prep recipe, this Spanish Impossible Pie recipe is a quick and easy breakfast, lunch or dinner option. Combining chorizo, spanish onion, peas, red capsicum/bell peppers and feta cheese, this flavourful dish will become a staple addition to your menu plan. ingredients:

  • 2 tsp olive oil
  • 2 medium chorizo, finely sliced
  • 1 small (100g) red onion, finely sliced
  • 1 small (200g) red capsicum, de-seeded and finely sliced
  • 2/3 cup (100g) frozen peas
  • 3 eggs
  • 1/2 cup (60g) gluten free self raising flour*
  • 1 cup milk
  • 1/2 cup (50g) grated parmesan cheese
  • 2/3 cup (100g) feta cheese, crumbled
  • Salt and pepper, to taste

instructions:

How to cook Gluten Free Spanish Style Impossible Pie Recipe

  1. Preheat your oven to 200C/390F.
  2. Line a baking dish with baking paper and set aside (I used an 8x11" ceramic baking dish)
  3. In a medium frying pan, saute your chorizo, onion and capsicum in your oil until chorizo is golden and the vegetables have softened.
  4. Remove your pan from the heat, stir through your peas and set aside.
  5. In a mixing bowl, add your eggs, flour and milk and mix until just combined.
  6. Stir in your chorizo mixture and cheeses and mix until combined.
  7. Pour your mixture into your prepared pan and bake for 45-50 minutes or until golden and cooked through.
  8. Enjoy immediately or leave to cool before slicing and storing in the fridge or freezer in an airtight container. This slice will keep for 2-3 days in the fridge or can be frozen to reheat and eat later!

NOTES:

*Don't have self raising flour? Use 1/2 cup gluten free plain flour + 1 tsp baking powder
