Easy Caramel Almond Slice Recipe - Gluten Free Dessert Recipes for High Tea

Fancy enough for high tea, but easy enough for anyone to make, this Easy Caramel Almond Slice is simple, delicious and even gluten free! Crunchy almonds and chewy caramel make this slice a delicious dessert to share with friends over coffee, or at a special occasion. 


Lots of people are baking right now... .and I guess the answer to "what does the world do when self isolating" is bake... and watch Tiger King... and make TikTok videos (though we've yet to tick that box 😜)

But you might be surprised to know that lately, I haven't really baked much of anything. I've been so busy with work, that by the time the weekend rolls around, my brain is pretty much mush - so my weekends have consisted of random chores around the house, walking around the neighbourhood (because our local park is so busy that #socialdistancing is not possible) and thinking about next week's work.

But this weekend, I found some energy and Jesse and I spent most of the day in the kitchen baking up a storn... and we came up with some seriously delicious recipes.

This Caramel Almond Slice was definitely our favourite though, and the first recipe Jesse thought I should share with you all.

Whilst it might sounds a little laborious, I promise you this is a super simple recipe that will impress anyone you share it with. It's fancy enough for a high tea and casual enough to enjoy over coffee with friends - and it's one recipe you definitely need to add to your self isolation to do list.

To make this recipe, you're going to need: 
  • Flour 
  • Almonds
  • Butter
  • Sugar 
  • Golden Syrup (or honey, brown rice syrup, rice malt syrup or maple syrup - all work!)
That's it.... and in around half an hour, you'll have a delicious, crunchy, chewy, caramel-heaven-like slice.

Ingredients:

For the Base
  • 1 1/2 cups (180g) gluten free plain flour 
  • 120g butter
  • 1/2 cup (100g) brown sugar
  • 1 egg
For the Topping
  • 1/3 cup (110g) golden syrup (or maple syrup, honey or brown rice syrup)
  • 1/3 cup (60g) caster sugar
  • 1/4 cup (50g) butter
  • 2 tbsp boiling water
  • 1 1/4 cups (100g) flaked almonds

Instructions:

How to cook Easy Caramel Almond Slice (Gluten Free!)

For the Base
  1. Preheat your oven to 180C/355F. 
  2. Line an 8" square tin with baking paper and set aside. 
  3. In a food processor, process your butter, sugar and flour until no large chunks of butter remain. Add your egg and pulse until combined.
  4. Press your base mixture into your pan using wet fingertips or a wet spoon (it will be quite sticky), forming an even layer.
  5. Bake your base for 15-20 minutes or until golden brown and firm to the touch.
  6. Leave to cool slightly whilst preparing your topping.
For the Topping
  1. To make the topping, add your syrup, sugar, butter and water to a medium saucepan and heat whilst stirring over a low heat until your sugar dissolves.
  2. Once your sugar has dissolved, turn the heat to high and bring your mix to the boil. 
  3. Cook your caramel mixture over a medium high heat, stirring frequently for ~5 minutes or until your caramel is thickened.
  4. Add in your almonds and pour your mixture over your cooked base, spreading to form an even layer.
  5. Place your slice back into the oven for 10-15 minutes or until the almonds are golden brown. 
  6. Allow to cool before slicing and serving.
  7. This slice is best kept in an airtight container in the fridge (at room temperature, the caramel will go a bit sticky the next day but it's still edible!)
