Does anyone else find Christmas treats so much more enjoyable than "everyday" treats? Because I most certainly do.

As soon as the Christmas carols are playing in stores, you'll find me in the kitchen - apron on, Christmas carols playing, flour everywhere and Christmas cookies being made.

Each year I like to add a few new recipes to our rotation of old favourites, and this year, my new favourite may be these Chocolate Crinkle Cookies.

They're almost like a brownie, with crisp edges and a pillowy sweet powdered sugar topping.

Better still? Whilst they look impressive, they are SO easy to make - and gluten free too!

To make these cookies, you'll need:
  • Cocoa powdered
  • Gluten free plain flour
  • Cornflour/cornstarch
  • 2 eggs
  • Sugar
  • Oil
  • Baking powder
  • Powdered sugar/icing sugar
The cookie dough does need to be chilled, however, you can save time by making these the night before and baking the cookies the next morning/day.

Easy Chocolate Crinkle Cookies Recipe (Gluten Free)

Christmas Cookie Swaps don’t get sweeter than this! This brownie like Easy Chocolate Crinkle Cookie Recipe will become a new family favourite. Gluten free, nut free and so easy to make.

Ingredients

  • 1/2 cup (50g) cocoa powder
  • 3/4 cup (150g) sugar 
  • 1/4 cup (60ml) oil (use a neutral tasting oil like coconut, vegetable or rice bran oil) 
  • 2 eggs
  • 3/4 cup + 2 tbsp (105g) gluten free plain flour 
  • 1/4 cup (30g) cornflour/cornstarch
  • 1 tsp baking powder
  • Pinch of salt
  • 1/3 cup icing sugar/powdered sugar, sifted

Instructions

  1. In a mixing bowl, mix your cocoa, sugar, oil and eggs until combined.
  2. Add all of your remaining ingredients, except the icing sugar. Mixing until just combined.
  3. Chill your dough for 2 hours.
  4. Whilst your dough is chilling, preheat your oven to 180C/355F and line your cookie sheets with baking paper.
  5. Once chilled, scoop your cookie dough out with a spoon, rolling into a ball and tossing in the icing sugar until coated. Place your cookie balls onto your tray, flattening slightly.
  6. Continue until all of your mix is used up. 
  7. Bake 10-12 minutes or until cracked and edges are cooked. Cookies will be soft but will firm up when cooled.

Notes:

These cookies can also be made not gluten free. Just use regular flour! :)
