This Very Berry Rocky Road Recipe is easy to make, gluten free and the perfect homemade gift alternative to store-bought candy for Christmas, Easter or Valentine’s Day. White chocolate, marshmallows, craisins and freeze dried strawberries combine to make this simple no bake treat. 

Rocky Road is one of my go-to Christmas treats. It's quick and easy to make, can be customised to suit your gift recipient's tastes and it's always a hit!

But whilst I love my more traditional Kid Friendly Rocky Road Recipe, I love playing around with different flavours and ingredients and so far have 5 rocky road recipes I alternate between.

This Very Berry Rocky Road Recipe is yet another twist - and a delicious one at that.

Combining creamy white chocolate with tart berris, fluffy marshmallows and cookie chunks, it's sure to be a hit - and sure to impress as an addition to your Christmas dessert spread!

To make this 5 Ingredient Recipe, you'll need:
  • White Chocolate
  • Marshmallows
  • Craisins/Dried Cranberries
  • Freeze Dried Strawberries
  • Vanilla Cookies (I use shortbread cookies or scotch finger biscuits, broken into chunks)

Very Berry Rocky Road Recipe (Gluten Free!)

This Very Berry Rocky Road Recipe is easy to make, gluten free and the perfect homemade gift alternative to store-bought candy for Christmas, Easter or Valentine’s Day. White chocolate, marshmallows, craisins and freeze dried strawberries combine to make this simple no bake treat.

Ingredients

  • 400g white choc
  • 125g marshmallows
  • 1 cup (130g) craisins
  • 30g freeze dried strawberries, crushed
  • 6 scotch finger or shortbread cookies, broken into pieces

Instructions

  1. Line a baking sheet with baking paper and set aside. 
  2. Melt your chocolate either in the microwave or using the double boiler method.
  3. Stir in your marshmallows, craisins, freeze dried strawberries and cookie pieces, mixing until everything is coated.
  4. Pour your rocky road mixture onto your lined tray, flattening to create an even layer.
  5. Chill in the fridge until your chocolate is solid and then slice into pieces.
  6. Keep your rocky road in the fridge, serving chilled. This rocky road will keep in the fridge for ~1 month and can also be frozen to last longer.
