They say you don't make friends with salad, but there is one food you can certainly make friends with; brownies.

These brownies are one of my go-to's when I need to bring a dessert. They're quick, easy and a huge hit with everyone who eats them. 

Each time I make them for an event, I find myself texting or emailing the recipe to friends - and then I realised I've never shared it with you!

Flourless Fudgy Cornstarch Brownies Recipe - gluten free, easy, chewy, dessert

This Chewy Cornstarch Brownie Recipe was actually a bit of an accident. 

You see, I was experimenting with different flours trying to create the ultimate gooey and chewy brownies and decided I'd try my luck with cornstarch.

For a few moments, I thought the recipe was doomed... but they came out of the oven, cooled and cracked and when I sliced them all of my fears dissolved.

These brownies were soft and fudgy, however, they had the crisp chewy edges and crackly tops I was looking for - and SO much chocolatey goodness.

To make these brownies, all you need is: 
  • Cornflour/Cornstarch 
  • Cocoa Powder
  • Eggs
  • Butter
  • Sugar
  • Chocolate Chips

Fudgy Cornstarch Brownies Recipe (Gluten Free)

Fudgy Cornstarch Brownies Recipe - Cornstarch is the secret to fudgy, flourless brownies made in minutes with crisp chewy edges. A family favorite recipe that is gluten free and perfect for gifting, dessert or an anytime treat!

Ingredients

  • 100g butter, melted
  • 1 cup (200g) brown sugar
  • 2 eggs
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/2 cup (60g) cornflour/cornstarch
  • 1/2 cup chocolate chips 

Instructions

  1. Preheat your oven to 180C/355F. Line an 8" pan with baking paper and set aside.
  2. Melt your butter and add to a mixing bowl with your sugar, eggs and cocoa powder, mixing until combined.
  3. Stir through your cornflour, mixing until combined. 
  4. Add your chocolate chips, mixing through evenly and pouring your brownie batter into your prepared pan.
  5. Bake for 20-25 minutes or until the edges have set and a skewer inserted into the middle removes clean.
  6. Allow to cool before slicing and serving.
  7. These brownies will be quite soft and fudgy (see notes for firmer brownies) and are best kept chilled in the fridge for ultimate fudginess.

Notes:

Want your brownies to be a bit firmer? Add an extra tablespoon of cornstarch/cornflour.

  2. Perfect recipe. I swapped most of the ingredients and it still turned out amazingly. I used 1 tbsp of ground stevia, 60gr of butter instead of 100gr, 1 flax egg and 1 chia egg, and added 1/4 cup of chopped pecans and less than 1/4 cup of chocolate chips. Baked for about 23 minutes.

  3. Been making this recipe regularly for my celiac best friend, but with a layer of chocolate bars in the middle, and although you have to bake it for a little longer, it becomes a delicious moelleux. Thank you so much!
