Recipe: Easy Baked Carrot Falafel

I am all about easy make ahead recipes. We have a busy life that can often feel hectic - so quick and easy make ahead recipes make eating healthy meals a breeze. 

One of my favourite recipes to make on the weekend for the busy week ahead is my Easy Gluten Free Baked Falafel Recipe - but lately I've been adding a little twist with this carrot version. 

It's an easy way to sneak in some extra veggies and makes for a seriously delicious snack or lunch addition. All you have to do is blitz the mix in a food processor, roll them into balls and bake them in the oven - then you're ready to eat!

I'll admit, it's not the prettiest recipe in the world - but ignore the photos and try them for yourself!

We've been eating them in wraps, on salads and on their own as a savoury snack.

Yield: ~1 dozen falafel balls

Easy Baked Carrot Falafel

Perfect for meal prep, this Easy Baked Carrot Falafel Recipe is gluten free, grain free and vegan and contains hidden veggies. 

Enjoy in a salad or wrap or eat on their own as a savory snack - the choice is yours! Clean eating friendly, kid friendly and the perfect make ahead recipe to add to lunchboxes!

ingredients:


  • 1 cup carrot pieces (about 2 medium carrots or 1 large carrot, peeled and chopped into chunks)
  • 1x 400g can of chickpeas, drained and rinsed (yields 225g or 1 cup of chickpeas)
  • 1 small onion, peeled and quartered 
  • 2 cloves of garlic, peeled
  • 1/2 tsp cumin*
  • 1/4 tsp ground coriander seeds*
  • 1/4 tsp salt 
  • 1/4 tsp baking powder
  • 3-4 tbsp coconut flour**

instructions


  1. Preheat your oven to 180C/355F. Line two baking sheets with baking paper and set aside.
  2. Add all of your ingredients, except for the coconut flour, to the bowl of your food processor. Process until smooth and no large chunks of carrot or onion remain. 
  3. Add in your coconut flour gradually, using only as much as needed to bring your mix together.
  4. Roll your falafel into balls (~1 tbsp of mix) and place onto your baking trays.
  5. Bake for 30-40 minutes or until lightly golden (the bottoms will be slightly darker, but that's okay!). 
  6. Allow to cool slightly before serving or cool completely before placing into an airtight container and storing in the fridge until you're ready to eat them.

NOTES:

*Don't usually like falafel or spices? Leave out the spices completely. 
**Add your coconut flour one tablespoon at a time, using just as much as needed to bring your mix together. If you use too much your falafel will be really crumbly once baked.
Want to add a little extra oomph? Add in 1 tsp turmeric.
