Recipe: Mexican Beef Rice Bowl

Healthy Beefy Mexican Rice Bowl Recipe - gluten free, clean eating friendly, low fat

I know what you're thinking... woaaaaah Kristy, don't get too creative with that name girl! But I'm sick... and when I'm sick my brain leaves the building ;P 

I've been coughing and spluttering for the last week and I currently have no voice at all and when I get sick like this, I tend to get lazy. Especially when it comes to dinner. The last thing I want to be doing is slaving over the stove - so I like to whip up something quick, but also something that's healthy and delicious.

Mexican flavours are always a hit in the SIL house and we always have brown rice made up and ready to go in the freezer. Combine the two and you have this Beefy Mexican Rice Bowl - well, that's what we call it around here anyhow!

Gluten Free Mexican Beef Rice Bowl Recipe - low fat, sugar free, clean eating friendly, healthy easy dinner recipe

This is one of those one pot wonders. You can add anything you like and a healthy and delicious dinner will be on the table in 15 minutes (as long as you have some rice already cooked!). Jussssttttttt the way I like it!

Truth be known... it's not just when I'm sick that I love dinners like this... it's every night ;P Quick healthy dinner recipes are my fave because I need to get in and out of the kitchen as quick as possible so that Mum can cook her and Dad dinner. 

But let me give you the recipe! >>
Healthy Mexican Beef Rice Bowl Recipe - gluten free, clean eating friendly, low fat


Beefy Mexican Rice Bowl Recipe serves 1, easily multiplied
gluten free, low fat, clean eating friendly

~100g beef mince 
1/4-1/2 onion, finely diced (depending on size)
~1/2 tsp cumin *
1/4 tsp garlic salt*
1/4 tsp paprika*
1/4 tsp oregano*
1/4 tsp cayenne pepper* (more or less depending on tastes)
1/2 small capsicum/bell pepper, diced 
1 small tomatoes, diced 
1 serve cooked brown rice 
Optional: add in whatever other veggies you like - we've used corn, spinach, a little bit of jalapeno and whatever we have in the fridge

In a small saucepan or frying pan over a medium heat, cook your beef and onion until browned. 
Add in your seasonings and cook for 2 minutes until fragrant. 
Add in your capsicum and cook until softened. 
Add in your tomatoes and rice and stir until warmed through and all ingredients are combined. 
Serve immediately!


*If you want to make things even easier - use taco seasoning instead!

Simple, healthy & delicious - that's how we like it!

For breakfast we love Healthy Baked Banana Breakfast Cheesecakes or Breakfast Bakes as we only need to add toppings, for lunch it's usually a sandwich and for dinner this is a favourite for Jesse whilst I love to keep Mini Pumpkin and Feta Frittatas or Cheesy Quinoa Bakes for dinner in a rush.

  1. Honestly, this is the kind of meal I've been having a lot of lately! I've been too exhausted to cook fancy dishes, so I've been resorting to one pot food, hehe. I love to use the crockpot and make seafood/meat dishes, or cook some quinoa with a teeny bit of cream cheese, pine nuts, and herbs. :D

  3. Just made it, loved it! Any suggestions for how to re-heat the leftovers properly? And can it be frozen and reheated? Any and all info would be appreciated, I'm very much a beginner at cooking in any way, shape or form!

  4. Hey Nicola,
    You can definitely freeze the leftovers if everything is mixed together. Then all you'll need to do is defrost it (either leaving it in the fridge overnight or defrosting it in the microwave) and then reheat either on the stove or in the microwave. To make sure your rice doesn't dry out, I'd suggest adding a drop or two of water and covering your pot/bowl while reheating to steam and warm everything through! Xx

  7. Hey Sarah, Cornflour/cornstarch is the best option for the smoothest cheesecakes, however, you may also use plain flour if you don't have any :)
