Recent Things: Pancake Addiction and Gooey Toasted Sandwiches

Recent Things in the Southern In-Law World

Happy Friday! We made it through yet another yucky cold and rainy week and the weekend is almost here! We've been pretty busy this week and I haven't seen much of my husband with him working away and working nights so I'm very much looking forward to the weekend. 

But let's take a look at what's been happening in our world recently; 

Cheesy Garlic Bread Toasted Sandwich with Camembert

Recent Obsession: So I returned home from Mainly Music on Wednesday at lunch time cold and hungry but I didn't feel like oatmeal for lunch. I sat down on my big red chair in our office to ponder what I was going to have for lunch and spotted my sandwich press and I knew immediately what I needed to make - a toasted sandwich! 

At first, I was going to make a boring old mighty mite and cheese toasted sandwich but then I remembered my Cheesy Garlic Bread Toasted Sandwich Recipe and decided I wanted that instead.... but when I looked in the fridge, the only cheese I had was camembert cheese.

So I switched the cheese out with camembert cheese and holy amazeballicious. I'm pretty sure I created heaven right there - and I've had it for lunch every day since ;P Obsessed my friends, obsessed.  Do yourself a favour and make it ASAP - it's like baked camembert in a sandwich.

Love for Christ Customised Plate Design

Recent Love: My customised plates! I had two plates printed from Christian Designs and Apparel through Cafepress and I'm in love. The one above is this Love for Christ Square Plate and I also got the Jesus and Tea is All I Need Rectangular Cocktail Plate and now I want to buy ALL THE PLATES. The shape and size is perfect and I love having my designs on them!

Cereal with Cottage Cheese

Recent Snack-love: Cereal and Cottage Cheese. It doesn't really matter what cereal, I'm kind of just obsessed in general. This was a random gluten free muesli topped with coconut chips. 

Gluten Free Pastry

Recent Kitchen Successes: I made gluten free pastry! And I danced around my kitchen and wore a silly little grin for the rest of the day. But even better - I made gluten free pastry that is also low fat, vegan and sugar free. BOOM!

And then I made salted caramel sauce and my life became a million times better. Recipes coming soon, my sweet peas! 

Pancake Obsession

Recent Breakfast Fave: Pancakes. My pancake obsession is back with a vengeance. In the last two weeks I've made Buttermilk Pancakes (the best healthy version), Buttermilk Yogurt Pancakes, Coffee Buttermilk Pancakes (can you tell someone bought buttermilk and then needed to use it up?) our favourite Protein Pancakes and Peanut Butter Chocolate Chip Pancakes.

Then I froze the leftover pancakes for a quick, easy and delicious breakfast option and I am so glad past Kristy decided to do that because present Kristy has a very happy stomach :) 

Glasses Time
Recent Discovery: Girlfriend needs glasses. So I went to the optometrist on Wednesday and found out that I need glasses! Not permanently and not for reading as such, just to wear when I feel I need them. 

I was totally confused by that (because I'm used to people either having glasses for reading or glasses permanently) but it's all because I have an incredibly weak right eye due to a stigmatism. I had a lazy eye when I was little but had surgery to correct it, however, my right eye has always been really weak and I've always been told that I'd need glasses one day. 

So now I've just got to rock them, right? ;) 

Healthy Banana Bread

Recent Plans: This weekend is Father's Day so we're having a barbecue at my Uncle's new house on Sunday after Jesse and I get back from church and tomorrow we're going to go shopping for my Dad and get my new glasses. Another loaf of this Healthy Banana Bread is also in my future as we've got bananas ripening to perfect in our fruit bowl (and I'm hoping there will be enough to make these Breakfast Banana Cheesecakes Recipe too!)

  1. Teehee....that feeling of YASSSS I CAN RULE THE WORLD! When you get the perfect texture of pastry, esp. when it's gluten free. I feel ya girlie, I feel ya....:) And this is probably a silly question! But I've always wanted to try and know what all this jazz is about--vegemite or mighty mite sandwich! is the latter pretty much the same thing as vegemite? Anyway, hope you're having a beautiful day and let's keep on with our devotions! <33

  3. That sounds amazing! Seriously, it's hard for me to pack up my kiddos and make it to a weekly Bible study in my area (on time!), so an email study is perfect for me. Looking forward to it!

  5. Hi Courtenay, It's actually the opposite (hence the warning in the post). Freedom Foods products used to be safe for oat tolerant coeliacs, however, they are no longer safe as they have changed where they buy their oats from and they are no longer wheat, nut or gluten free (as they contain traces of gluten from other grains).
