Recent Things: Dinner Experiments, Nutella Celebrations and DIY Dummies

Hi sweet things! It's Friday again and this week has been one of those weeks so I am just so ready for it to be over. It's been one thing after another and I'm tired, hyper-emotional and ready flop so bring on the weekend!

But let's have a look at the good bits of the week that was, shall we?

Recent Fun: We started on a new project last weekend which we hope to share with you soon, but unfortunately Miss Trixie isn't the greatest DIY-er in the world so we had to give her the flick!

Recent Celebrations: World Nutella Day! Yesterday (February 5th) was World Nutella Day so I of course had to join in with the celebrations by adding some nutella to my breakfast stack. This was our favourite Healthy Buttermilk Pancakes Recipe, layered with PB and topped with PB and nutella!

Recent Snack-session: That is, snack obsession. This week I've been obsessed with what I've been calling "protein icecream" (though the pictured kind of melted by the time I got around to taking a photo). Just blitz up cottage cheese, frozen fruit (I love blueberries or banana) and some peanut flour and you're good to go!

Recent Experiments: This week I've been experimenting with new dinner dishes whilst Jesse's been away - there's been sang choi bao, creamy potato bake, pumpkin and feta risotto and last night this deeeeeeeeelicious Creamy Chicken and Rice Soup (though, it doesn't exactly look soupy from the top - ha!)

Recent Successes: Quinoa dinner bowls for three! On the weekend I whipped up these super simple quinoa bowls for Katrina, Jesse and I - quinoa, roasted pumpkin and chickpeas, grilled chicken breast and creamy feta cheese. Healthy, simple and oh so delicious!

Recent Faves: Microwave breakfast bakes/mug cakes. I've been experimenting with lots of new microwave recipes that I can't wait to share with you soon!

Recent Dessert Fave: This Healthier Chocolate Pudding Recipe. Seriously ridiculously good, my friends. Make it ASAP!

But tell me, how has your week been?
I'm in serious need of a pick me up right now - what's one thing that never fails to cheer you up?
And what's the best thing you've eaten this week?

  2. Is it strange that I'm getting very envious of your obviously lovely weather currently because I can see the pretty green grass in the backgrounds of your pictures?...I MISS green grass! I am getting the Winter blues here in America. Ha! Have a great weekend!

  3. Mug cakes obviously always bring joy!
And you know I've never had nutella and now the only way I would eat it is if I make my own vegan version, hahaha!

  4. Looks can be deceiving because we've been having some pretty blah weather lately! We went from glorious sunshine to gloomy fall-like days and it's making me dread the cold weather to come haha ;P

  5. They so do! I can't believe you've NEVER had nutella - mind you, Jesse only tried it for the first time after meeting me and his family only tried it after we bought them some when we were there :P
