Soooooooo, it hasn't really felt like winter in Australia lately. 

Sure, the evenings are chilly? But the days? Beautiful blue skies, warm sunshine and Spring flowers blooming certainly don't scream winter to me...

But don't think I'm complaining! 

You see, whilst my birthday is in winter, I am definitely a summer girl. I live for hot sunshine filled days, cut off denim shorts, t-shirts and nights hanging out with friends never having to worry about a cardigan. In winter, I'm usually a hermit - trying to keep as warm as possible and avoiding the outside world.

But this winter? Not so much! In fact, I've swapped warm winter desserts for cool summery desserts - and today I wanted to share one of my current faves!

4 Ingredient No Bake Lemon Cheesecake Balls Recipe - gluten free, grain free, healthy, refined sugar free, nut free, clean eating dessert recipes

These No Bake Cheesecake Bites are a delicious treat year round. They're made in minutes and secretly so much healthier than your average cheesecake. 

Using just four ingredients, they are the perfect treat to make on a whim. 

So let me share the recipe with you! >> 




4 Ingredient Easy No Bake Lemon Cheesecake Balls Recipe - gluten free, grain free, healthy, refined sugar free, nut free, clean eating dessert recipes

Four Ingredient No Bake Lemon Cheesecake Bites
makes ~30 bites that are gluten free, grain free, 
clean eating friendly, refined sugar free

250g full fat cream cheese
The zest and juice of one small lemon
1/4 cup maple syrup 
2 cups (200g) desiccated coconut + 1/4 cup extra for coating
  • Add all of your ingredients, except the 1/4 cup of coconut, to a bowl and either mix by hand or using a mixer (I usually use a mixer because it's faster and easier!). You can also use a food processor if you prefer!
  • Once all of your ingredients are mixed together, take tablespoon size pieces of the mix and roll into balls. 
  • Once all of your balls are rolled, add your 1/4 cup of coconut to a small bowl and roll your balls into the coconut, coating the outside. 
  • Once all of your balls are rolled and coated, you're ready to enjoy! 
  • Enjoy immediately or keep in an airtight container in the fridge for 2-3 days. If you want to keep these bites for longer, they also keep really well in the freezer - simply take them out of the freezer and leave them to defrost slightly before eating!
Notes:
  • If your mix is too wet/dry, simply add more/less coconut.
  • If you like your treats sweeter, increase the maple syrup to 1/3 cup.
