When we were in Disneyland recently, I smelt the same thing every single day as I walked around the park: churros.

The sweet smell of cinnamon sugar covered buttery churros filled the air.

But are Disneyland churros gluten free? No. Can you get gluten free churros at Disney World? Yes! But that wasn’t going to help me when I was on the other side of the country.

So, while I was at Disneyland I tried to satisfy my churro cravings in other ways. I found myself strolling through the shops asking “Is churro toffee gluten free?” nope. “Is churro popcorn gluten free?” yes, but let’s just say you don’t want to eat it (so gross and nothing like a churro! 🤢).

Soooo, I found a gluten free snickerdoodle cookie at the grocery store and tried to convince myself it was churro-like until I got home.

And when I got home? I got straight to work on a gluten free churro recipe.

But then I got lazy.... and I came up with perhaps the best idea of all: churro Chex mix.

So let me tell you all about it! >>

This Churro Chex Mix has all the Flavour of churros without any of the hassle. All you have to do is melt, mix and bake (though you can even leave that part out... just check out the recipe).

Before you know it, you have a crunchy snack mix you won’t be able to stop eating - and you’ll totally crush your churro cravings.

Be warned though, this churro Chex mix isn’t going to last long. You’ll hear the jar or container opening and the crunching of Chex and before you know it, you’ll be left with cinnamon sugar-coated crumbs.

But it’s okay, because it won’t take you long to make another batch.

Easy Gluten Free Churro Chex Mix Recipe - Inspired by Disneyland Churros, this crunchy cereal snack mix is super easy to make. ingredients:

  • 4 cups (120g) Chex Cereal (*see notes for recommendations and substitutions)
  • 1/4 cup (50g) brown sugar
  • 1/4 cup (50g) butter
  • 1/4 cup (50g) white sugar
  • 1 tsp cinnamon

instructions:

How to cook Easy Churro Chex Mix Recipe (Gluten Free)

  1. Preheat your oven to 135C/275F. 
  2. Line a cookie sheet/baking pan with baking paper and set aside.
  3. Add your chex to a large mixing bowl and set aside.
  4. Add your white sugar and cinnamon to a small bowl, mixing to combine and setting aside.
  5. In a small saucepan, heat your butter and brown sugar over a medium heat until everything is combined and your mix starts to bubble (stir constantly). 
  6. Add your butter mixture to your chex and stir until everything is evenly coated.
  7. Add 1/2 of your sugar mixture to your bowl, lightly tossing your chex mix to coat it with the cinnamon sugar.
  8. Place your chex mix onto your prepared pan, spreading out to form an even layer.
  9. Sprinkle your remaining cinnamon sugar on top, mixing your chex mix around a bit to ensure everything is evenly coated.
  10. Bake your chex mix for about 45 minutes or until crispy and dry to the touch.
  11. Enjoy immediately or leave to cool before storing in an airtight container.
  12. This chex mix will keep for a week or more in a container at room temperature... but it probably won't last that long ;)

NOTES:

*I use Corn Chex for this recipe, but you can also use rice or wheat (not GF) chex (just don't use a flavour). If you're in Australia and don't need it to be gluten free, use Crispix Cereal. We've also made this recipe with cornflakes and it tastes just as good - it's just not as crunchy and obviously looks different.
