I don't know about you, but I often find myself eating the same thing for lunch over and over and over again.

Maybe it's habit, maybe it's laziness - but I easily find myself stuck in a rut of boring lunches.

But this year, I'm on a mission to change that. With a little bit of meal prep on the weekends and a freezer full of delicious make ahead meals, my lunches have been looking better than ever - and this recipe is one of my new lunch faves.

The perfect healthy work lunch idea or gluten free lunch box recipe, this Fried Rice Slice combines everything you love about fried rice into a simple easy to make slice.

I've been making up a batch on the weekend, slicing it into pieces and either freezing it to defrost and eat later or keeping slices in the fridge in an airtight container for a quick meal option during the week.

Even better is that this recipe can be customised to suit your tastes or what you have in the fridge. We use it as a way to use up whatever veggies we have in the fridge and often switch it up by adding some bacon or chicken to add some extra protein.

Play around with it, make it your own and I'm sure you'll have a new favourite.

Whether you eat it cold (Jesse's choice) or hot (my choice), it's a great lunchbox or work lunch recipe because it's packed full of veggies, easy to eat and healthy too. 

Even the fussiest of kids will love this recipe - so here it is!

Gluten Free Fried Rice Slice Recipe - Taking all the flavour of fried rice and turning it into a delicious work lunch idea and lunchbox recipe, this baked fried rice recipe is full of vegetables and can be customised to suit your tastes. Healthy, gluten free, clean eating friendly, sugar free and seriously delicious.

ingredients:

  • 4 cups cooked brown or white rice, chilled*
  • 2 1/2 - 3 cups vegetables of your choice (see notes for recommendations) 
  • 2 cloves garlic, crushed
  • 2 tsp (10 ml) sesame oil 
  • 1/3 cup (80 ml) gluten free soy sauce
  • 4 eggs

instructions:

How to cook Gluten Free Baked Fried Rice Slice Recipe

  1. Preheat your oven to 200C/390F. 
  2. Line a baking dish with baking paper and set aside (I used an 8x11" ceramic baking dish)
  3. In a saucepan or wok, stir fry your vegetables and garlic in your soy and sesame oil until just softened. 
  4. Add your cooked vegetables to your rice and stir to combine. 
  5. Mix in your eggs, stirring until everything is coated.
  6. Pour your mixture into your baking dish and bake for 45 minutes or until your slice is golden brown and cooked through.
  7. If your slice seems like it's too dry/crumbly during breaking. Crack an egg into a small bowl and beat with a splash of soy sauce. Spoon your egg mixture over your slice and continue baking. 
  8. Once your slice is cooked, slice and serve immediately or leave to cool before slicing and storing in an airtight container.
  9. This slice will keep in the fridge in an airtight container for 2-3 days or can be frozen to defrost and eat later.

NOTES:

*I find chilled rice holds up better in this slice, but I've also made it with hot freshly steamed rice.
**For the vegetables in my pictured fried rice slice, I used broccoli, diced carrot, sliced red capsicum/bell pepper, frozen peas and frozen corn. The measurements don't have to be exact, I tend to use whatever I have in the fridge.
