No Bake Chocolate Peanut Butter Oat Slice Recipe - gluten free, vegan, no bake dessert recipe

A creamy chocolate and peanut butter filling meets crunchy golden oats in this easy No Bake Chocolate Peanut Butter Oatmeal Slice Recipe. Gluten free, vegan, egg free and no oven needed!


So, a few days after we moved into our house, I baked a quiche and found that our oven temperature was way, way off.

I opened the oven door and it felt like opening the door to hell. What was supposed to be 180C/355F almost singed my eyebrows off as heat blasted from the oven and within seconds, the baking paper surrounding the quiche was burnt too. 

I knew it wasn't 180C, so the next day I went off to buy an oven thermometer and my suspicions were confirmed.... 180C was actually 240C.... and whilst the dial goes much much higher, I haven't even been game to try 😅


So what do you do when your oven thermostat has a mind of it's own? You experiment.

With a bag of Gloriously Free Uncontaminated Oats in the pantry and a big block of chocolate, I decided I wanted to make a no bake slice... and ohhhh am I glad I did.

This No Bake Chocolate Peanut Butter Oat Slice Recipe is gluten free, vegan and seriously, ridiculously delicious.

All you need is a saucepan, a stovetop, a slice or cake tin and the ingredients listed below and before you know it, you'll have a delicious dessert you won't be able to stop eating.

We've taken to making a big batch and cutting it into small pieces to keep in a container in the fridge. That way whenever we feel like something sweet, it's always there waiting.

I finished the latest batch last night and am already dreaming about another batch whilst writing this post 😂

For this recipe, you'll need: 
  • Butter

  • Chocolate
  • Peanut Butter

A creamy chocolate and peanut butter filling meets crunchy golden oats in this easy No Bake Chocolate Peanut Butter Oatmeal Slice Recipe. Gluten free, vegan, egg free and no oven needed!

Ingredients

  • 200g butter, cubed
  • 1/2 cup (100g) brown sugar
  • 3 cups (270g) gluten free rolled oats*
  • 1 1/2 cups (250g) chocolate chips 
  • 3/4 cup (180g) peanut butter

Instructions

  1. Line a 7x11" slice tin or 8x8" cake tin with baking paper and set aside.
  2. Add your butter and sugar to a saucepan and heat on a medium heat until melted.
  3. Add your oatmeal, stirring over a medium heat until your oats begin to brown and the mixture is bubbling - about 5 minutes. 
  4. Pour 3/4 of your oat mixture into your prepared pan, pressing to form an even layer.
  5. Next, melt your chocolate and peanut butter together over a double boiler (place a large heatproof mixing bowl on top of a small saucepan filled with 1" of water and heat over a medium heat, making sure the water does not touch the bowl). 
  6. Once your chocolate has melted, pour the mixture over your base and sprinkle the remaining oat mixture on top. 
  7. Place in the fridge to chill until set and slice into pieces.
  8. This slice will keep in the fridge in an airtight container for up to a month or can be frozen to defrost and eat as desired.
