Is anyone else finding themselves slowly transforming their house into Christmas mode?

Whilst usually I'd get everything done in the one weekend, we're still working on some home to-dos before baby arrives - and at 9 months pregnant, I totally don't have the energy to decorate our house all in one go - so Christmas is slowly starting to appear.

One tree is up, another two are going up today, the lounge room is decorated and our kitchen has a sprinkling of Christmas magic too.... but most importantly, Christmas scents have been filling our house with treats baking away in the oven.

With a newborn arriving in just two weeks, I don't know how much time (or energy) i'll have for Christmas baking, so I've been baking and enjoying Christmas treats while I still can!

These Gingerbread Blondies are a new favourite we've been enjoying with a cup of coffee. They have just the right amount of sweetness, are full of Christmas flavour and are dense and fudgy like any good blondie should be.

Better still? You can totally make the recipe your own. Throw in nuts or stir through chocolate chips (just don't make the mistake I did with the last batch and stir them through when the mix is too hot - notes below!) or frost them with your favourite frosting and Christmas sprinkles.

To make this Gluten Free Gingerbread Blondies Recipe, you will need: 
  • Butter
  • Golden syrup
  • Brown sugar
  • Eggs
  • Milk 
  • Gluten free flour
  • White chocolate chips or mix ins of your choice (optional) 
  • A light dusting of icing/confectioners sugar (optional)

Blondies get a Christmas makeover with this Easy Gluten Free Gingerbread Blondies Recipe. With all of the flavours of gingerbread in a chewy white chocolate chip studded blondie, these are sure to be a holiday hit!

Ingredients

  • 1/2 cup (100g) butter
  • 3/4 cup (240g) golden syrup
  • 1/2 cup (100g) brown sugar
  • 1 1/2 tsp ground ginger
  • 1 tsp cinnamon
  • 1/3 cup milk
  • 2 eggs
  • 2 cups (240g) flour, sifted
  • Optional: White chocolate chips or mix ins of your choice

Instructions

  1. Preheat your oven to 180C/355F.
  2. Line an 9x13" slice pan with baking paper and set aside.
  3. Add your butter, golden syrup and sugar to a small saucepan, stirring over a medium heat until your butter is melted, sugar is dissolved and the mixture is bubbly.
  4. Remove your butter mixture from the heat and stir through your spices, leaving the mix to cool.
  5. Once your butter mixture has cooled, add in your milk and eggs, mixing until combined.
  6. Sift your flour and stir through your wet ingredients, mixing until just combined.
  7. Stir through any mix ins of your choice and spoon your mixture into your prepared baking pan, smoothing to form an even layer.
  8. Bake for 25-30 minutes or until golden and a skewer inserted into the centre removes clean.
  9. Allow to cool before slicing and dusting with icing/confectioner's sugar.
  10. These blondies will keep for 2-3 days in an airtight container at room temperature or in the fridge.
