Recipe: Apple Crumble Oatmeal for One

So, before Miley Cyrus went all... well... I don't even know what you would call Miley Cyrus.... But anyway, before Miley Cyrus started licking sledgehammers and riding on wrecking balls, she thought she had the best of both worlds.

Thought because Hannah Montana aint got nothin' on this recipe. 

You see, this Apple Crumble Oatmeal Recipe really is the best of both worlds. It was a random experiment turned oh so right. 

I'd decided that I was going to make an apple breakfast dish but I couldn't for the life of me decide whether I wanted a breakfast apple crumble or a warm bowl of oatmeal.

So what does one do when they can't decide? Combine the two options and call it a thing, friends. 

At first I thought of making baked oatmeal - but then I realised that the crumble topping wouldn't really be so crumbly against the solid baked oatmeal so I decided to do something totally new - and something way quicker than baked oatmeal. 

I switched on the oven, grabbed a pot and decided I would make hot oatmeal filled with delicious chunks of apple and warm and comforting cinnamon - and then I'd top that off with a crumble topping.

Pop that baby in the oven and 10 or so minutes later, you've got heaven in a bowl... or ramekin if we're being technical here. 

Warm and comforting oatmeal on the bottom with juicy apple chunks - and a crunchy, crumbly crumble topping on top. Heaaaaaaaaaaaaaaaaaaaaaaaaven, my friends. 

But what's the point of rambling? I need to let you try it for yourself!
So let me share the recipe with you! >> 


Healthy Single Serve Apple Crumble Baked Oatmeal Recipe - low fat, gluten free, healthy, vegan, egg free, dairy free, clean eating friendly, sugar free breakfast recipes

Healthy Apple Crumble Baked Oatmeal Recipe for One
a healthy single serving breakfast breakfast recipe that can easily be multiplied
low fat, gluten free*, refined sugar free, clean eating friendly, vegan 

For the oatmeal "base": 
1/3 cup (30g) gluten free oats* see notes for substitutions 
1/4-1/2 tsp cinnamon (to your tastes)
1/2 cup milk of your choice or water (we use milk for creamier oats!)
1 medium apple, diced 
Sweetener, to taste (we used 1/2 tsp maple syrup) 

For the crumble topping:
1 tbsp (~5g) almond meal/almond flour
1 tbsp (10g) gluten free oats* see notes for substitutions 
2 tbsp (30g) unsweetened applesauce 
1 tsp maple syrup 
  • Preheat your oven to 180C/355F
  • Lightly grease a single serve ramekin/baking dish and set aside. 
  • In a small saucepan, combine all of your "base" ingredients and cook over a medium-high heat, stirring frequently. You can cook your oats in the microwave if you prefer, I just always manage to get oatmeal everywhere but my bowl when that happens!
  • Continue cooking your oats until they have thickened and your apple has softened and pour your base mixture into your ramekin. Ensure there's some space at the top in case the mix bubbles up. 
  • Combine all of your crumble topping ingredients in a small bowl and place on top of your oatmeal mixture. 
  • Place your  ramekin onto a tray lined with baking paper (this just makes it easier to clean up if your oatmeal spills out) and place your oats into the oven for 10-15 minutes or until your crumble topping is golden and crunchy. 
  • Serve immediately on its own or with toppings of your choice!
*Find out more about oats on a gluten free diet. If you can't eat or don't have oats, feel free to switch them for quinoa flakes (you may just need to add a little extra sweetener as quinoa flakes can be quite bitter).
