Recipe: Honey Sweetened Chai Zucchini Muffins (Gluten Free!)

These muffins are kind of Jesse's worst nightmare.... 

You see, he hates the smell and taste of chai and, just like a fussy child, he refuses to eat any baked good with "green bits" inside. 

But that's actually why I made them..... 

Why? Because it meant I didn't have to share.

You see, usually, when I bake something it disappears in a matter of seconds as soon as Jesse and my Dad get home from work - or they cool down enough that I take whatever it is out of its tin. 

But these muffins? These I could keep all to myself. 

And I promise you, you'll want to do the same.

They're soft and fluffy and full of flavour, delicately spiced with cinnamon, cardamom and ginger and lightly sweetened with honey. 

They're the perfect "healthy muffin" that doesn't taste or feel healthy at all - and they're so easy to make! Luckily, I'm not so greedy that I'll keep the recipe to myself too...

Gluten Free Honey Sweetened Chai Zucchini Muffins Recipe - low fat, gluten free, healthy, sugar free, clean eating recipe, nut free, kid friendly


Honey Chai Zucchini Muffins Recipe
low fat, gluten free, refined sugar free, nut free, dairy free option

1 cup (110g) grated/shredded zucchini 
1/3 cup (100g) honey 
1 egg 
1/4 cup (50g) butter, melted (or use coconut oil for dairy free)
2 tbsp (30g) unsweetened applesauce 
1 1/2 cups (180g) gluten free plain flour 
1/2 tsp baking powder
1/2 tsp baking soda 
1/2 tsp ground cardamom
1/2 tsp ground ginger
1/3 cup milk of your choice
  • Preheat your oven to 180C/355F
  • Line a muffin tin with paper liners or generously grease and set aside. 
  • In a mixing bowl, combine your grated zucchini, honey, egg, melted butter/oil and applesauce. 
  • Add in your plain flour, baking powder, baking soda, cinnamon, cardamom and ginger and mix until combined. 
  • Add in your milk, stirring until combined.
  • Spoon your muffin batter into your prepared muffin tins, filling each well about 3/4 full. 
  • Bake your muffins for 15-20 minutes or until golden and cooked through. A skewer inserted into the middle should remove clean and they should be lightly firm when touched.
  • Allow to cool before removing your muffins from the tin.
  • These muffins will keep in an airtight container at room temperature for 2-3 days and can also be frozen to defrost and enjoy later.

What's one food or food combination you love that other people tend to think is odd? 
Whenever I'm cooking dinner for just myself, I usually make something with basil pesto or my Healthy Cheesy Tuna Pasta Bake Recipe because Jesse isn't a big fan of either. One weird food combination I love that other people think is weird? It has to be Nutella and Goat Cheese Sandwiches.
