As a child, I hated coconut.

I thought people who loved bounty bars and cherry ropes were strange, I though macaroons were a disgrace to the human race and would turn my nose up at any coconut enhanced treat.

But somewhere along the way, I fell in love with the enemy. You see, now I’m that “strange” person who puts coconut in ALL THE THINGS... and I promise you they’re delicious.

This Coconut Chocolate Slice Recipe came about on a whim. I decided I wanted to bake something sweet (and chocolatey) and there was a packet of shredded coconut in the pantry that was calling my name.

What I ended up with was a brownie-like slice that’s crisp and chewy, with a creamy frosting and delicious coconut flavour. It’s super simple to make and seriously delicious to eat.

Gluten Free Chocolate Coconut Slice Recipe

ingredients:

For the Base
  • 100g butter, melted 
  • 3/4 cup (150g) coconut sugar or brown sugar 
  • 1/2 cup + 1/3 cup (100g) gluten free plain flour 
  • 1/2 tsp baking powder
  • 1/4 cup (25g) cocoa powder 
  • 1/2 cup (50g) shredded or dessicated coconut
  • 1 egg 
For the Frosting
  • 1 cup (100g) icing sugar, sifted 
  • 2 1/2 tbsp (20g) cocoa powder 
  • 2 tsp (10g) butter, softened
  • 1-2 tbsp boiling water
  • Optional: Extra coconut, to top

How to cook Gluten Free Chocolate Coconut Slice Recipe

  1. Preheat your oven to 180C/355F. 
  2. Line an 8x8" baking pan with baking paper and set aside. 
  3. Add all of your base ingredients to a bowl and mix until combined.
  4. Press your base mixture into the base of your tin, ensuring it's spread out to all of the edges and is in an even layer.
  5. Once your base has been pressed into your tin, bake it for 20-25 minutes or until cooked through and crisp on the edges. 
  6. Turn off the oven and leave your base to cool in the tin. 
  7. Once your base has cooled, add your butter, icing sugar and cocoa powder to a medium mixing bowl. 
  8. Add just as much boiling water as needed to create a smooth frosting. 
  9. Once your frosting is combined, spread it over your cooled base and then sprinkle with coconut. 
  10. Chill your slice in the fridge for ~30 mins or until your icing is firmer, then slice into squares and enjoy! 
  11. This slice can be kept in the fridge in an airtight container for up to a week. 

NOTES:

If you're a frosting fan, feel free to double the frosting for a thicker layer.

    1. Yes you can and it freezes really well! You can freeze it both as a full slice (then defrost and slice later - this is what I do if making in advance for an event) or after slicing into individual pieces.
