Recipe: Skillet Elotes/Mexican Street Corn Salad

Skillet Elotes Mexican Street Corn Recipe - gluten free, low fat, clean eating recipe

An easy twist on Elotes (also known as Mexican Street Corn), this warm corn salad is sure to be a hit and is the perfect side dish for any Mexican fiesta! Gluten free, low fat, clean eating friendly and seriously delicious!.

Whilst being a coeliac means I can't often eat things I see when I'm out, I'm always searching for new ideas and inspiration - and the inspiration for this recipe was actually found in Disney's California Adventure last November.

You see, everytime we strolled through the park towards Pixar Pier, I saw the cart filled with bags of corn on the cob.

Corn with condiments including parmesan, mayonnaise and chilli-lime spice. It sounded strange, but everytime I saw someone eating it, my curiousity peaked.

I never actually tried it in the parks, but when we got back home... I couldn't stop thinking about it... and so I set to work on creating my own version.

So let me share it! >> 

Skillet Elotes Mexican Street Corn Recipe - gluten free, low fat, clean eating recipe, easy salad recipes, side dish

Traditionally, Elotes (also known as Mexican Street Corn) is corn coated with lime and mayonnaise and then topped with cojita cheese and chile powder.

Because Australia is pretty much terrible at Mexican food (I'm sorry, it's true), it's pretty much impossible to find cojita cheese here, so I played around with a few different options until I came up with a solution.

When I swapped cojita with feta cheese and added greek yogurt to the "crema", I pretty much fell in love.... but we ate it on the cob and it was a huge mess, so whilst Jesse was a fan of the flavour, he wasn't so keen on having it again. 

But you can't just fall in love with a food and never eat it again, so I had to come up with a solution.... and this Skillet Elotes Recipe was born. 

Like a warm corn salad, it's quick and easy to make and so full of flavour. You'll find yourself wanting to eat it again and again and again.

Skillet Elotes/Mexican Street Corn Salad

Ingredients

  • 4 cups (650g) corn kernels, fresh or frozen
  • 2 tbsp mayonnaise
  • 2 tbsp greek yogurt
  • The juice of one lime 
  • Cayenne pepper, to taste*
  • Salt and pepper, to taste
  • 1/2 cup feta cheese, crumbled
  • Two spring onion/scallion bulbs, finely chopped

Instructions

  1. Add your corn to a skillet with a splash of water, heating over a medium heat until your corn is warm (frozen corn will take longer to defrost and reheat). 
  2. Once your corn is warmed through, remove your skillet from the heat and add your corn to a bowl with your mayonnaise, greek yogurt and lime juice. 
  3. Toss to coat, adding salt, pepper and cayenne to taste. 
  4. Toss through half of your spring onions and feta cheese and spoon into a serving dish, topping with your remaining spring onions, feta and a sprinkle of cayenne. 

Notes:

*If you have tajin seasoning, simply use that instead. I like to add tajin and lime but you can leave the lime out as tajin has lime in it. Don't like it hot? Simply omit the cayenne pepper!
