Recent Things: The Dorky Joneses, Easter Eggs and Punny Tees (RT#10)

Friday again - and one week before Easter! Where does the time go?!

This week has been reaaaally busy for me so the blog has been neglected a little bit - but I promise next week is filled with fun. I've got a tonne of baking and photographing to catch up on as I really want to share some yummy Easter recipes with you all! 

But let's take a look at what we've been up to recently (and there's some recipe sneak peeks too!) 

I Can't Keep Calm I'm a Jones Hoodie

Recent Dorkiness: So, Jesse bought us these hoodies as a un-iversary present, which came quite a bit late, but they were totally worth waiting for. We're really dorky... really

Homemade Healthy Easter Eggs

Recent Recipe Testing: These beauties would be homemade Easter Egg Truffles and holyyyyyy hallelujah they are good. Keep an eye out for the recipe this weekend (and if you don't see it, tell me to stop procrastinating and photograph them NOW) - they're gluten free, sugar free, low fat, vegan and absolutely delicious. 

Mini Healthy Cheesecakes

We have also perfected our Healthy Banana Cheesecake crusts so the recipe is coming very very soon - we're inclined to call them Banana Breakfast Cheesecakes (as we've been eating them for breakfast and they're seriously that healthy) but we're worried that might scare some of you off.

Plus, do you see why I don't photography my food all the time? My kitchen has the worst lighting in the universe. The wall behind that plate is actually cream, it just looks like a black abyss ;P

Pretzel Knot Scarf - Obsessed with Scarves

Recent Must Have: Scarves, scarves and more scarves. This week has been cold, so I've been wrapping myself up like a burrito. The pink pashmina was the best buy at just $8 and I've also developed a little obsession with pretzel knotting scarves (well, that's what I call it but I don't know if it's actually a thing since I'm not really cool enough to be part of things ;P)

Recent Reads: Hellllllooooooooo bookworm! These are the three books I've devoured this week and they were all incredible. Since I read so many books and love getting book suggestions from other people, I'm thinking of sharing some book reviews every now and again - what do you think? 

I definitely need to tell you about Jesus or Nothing and How to Be Rich because they had me nodding along and mmmm-himg to just about every page. 

Hiding inside a cardboard box waiting to jump out

Recent Laughs: So last night.... I hid inside a cardboard box waiting for Jesse to get out of the shower and then when he opened the door I jumped out. 

I scared the absolute living daylights out of him. He threw his hands up in the air and jumped about 10 feet and it was hilarious. I'm known for being a little bit of a ninja so you never quite know what to expect ;P 

Cooking for Church Dinner

Recent Successes: Dinner on Sunday at Church! Everything was devoured and everyone commented on how good it was. We had ribs, cornbread and mini cheesy quinoa quiches as well as salad and baked potatoes.

Recent Mantra (and iPhone background): As inspired by How to Be Rich and our current Discipleship Explored Work - this is something I'm trying to remember this week. We all get way too stressed about money (myself included) and it's really not worth it.

Chanel snuggled up in a blanket

Recent Nelly-ness: The queen of snuggles has been loving this cold weather because it means there are blankets and laps waiting to be snuggled into. 

Recent Health: I went back to my haematologist yesterday and found out that.... MY IRON LEVELS ARE GOOD!! So I'm off the hook for two months and then it's another round of blood tests to see when I'll need my next iron infusion - which hopefully won't be for a long long time (but he said it's impossible to know, I might need one the next week, six months later or a year later). The plan now is to keep my iron levels at a normal level and never let them drop down as low as they were before. 

He's also planning on only giving me a half dose next time so I don't get quite so sick!

Together we're working on designing a range of custom designed items - from punny tshirts to cute workout wear and stationery.

Here's a little sneak peek of what we're working on....

The eggshausted tee is clearly one of our punny styles whilst the fueled by peanut butter racer back and allergy queen platter was created for me because I am the peanut butter queen and the allergy queen. 

We've actually said for a while that I needed a special plate and that was one of the first things we designed ;P 

But I'd love to know - would you be interested in some cute custom designed things? A lot of our designs are going to focus on silly puns (because we think we're punny), healthy living and allergy awareness.

  9. Hey Kate, I'm so glad you loved it! That sure is peanut butter on top - I'm always putting some sort of nut butter on top of my breakfast, whether it's oatmeal, baked oatmeal or cereal bowls!

  10. I made this last night it was heaven! i added some agave for sweetness and topped it with Greek yogurt this morning mmm :)
    any one any idea of the nutritional info??

    I'm so glad you loved the recipe! I'm not sure about the nutritional info - it would really depend on the ingredients you used. A lot of SIL readers use websites like My Fitness Pal to work out the nutritional info so you might like to try that! xx

  12. Amazing! Never had baked oatmeal before, may become a regular menu item. I only had steel cut oats or bob's red mill old country style muesli. I opted for the muesli since I thought it would cook quicker and had yummy dates and raisins. I soaked the muesli in the milk for some time to soften the whole grains, and used a little over 2 cups. Point is this works well even for slower cooking grains. Dried fruit works well to sweeten if you don't want sugar. Thanks for posting! Cannot wait to try recipe as written when I have ingredients on hand.

  14. Could I prepare this the night before and let it sit in fridge then bake in morning? Do you think the bananas would keep?

  15. Hi Jeanette,
    For the best results, I'd suggest baking it the night before and then just heating it up in the morning - that way you'll have the perfect texture and you'll save time in the morning! :)

  16. This is great! I've tried a lot of banana baked oatmeal recipes and experimented with all different ratios of milk eggs and oats....Tried yours earlier this week and I think you nailed it! Mixed in a good bit of cinnamon and it was delicious! Thanks for sharing.

  17. And Bonus: my kids are not big on regular stovetop oatmeal, but they devour this! So it's a great way to get some healthy whole grains into their breakfast!

  19. Are the bananas supposed to be very ripe bananas(brown and squishy) or just yellow ripe bananas?

    Whenever using bananas in baking (or really recipes in general) you want to use them when they're brown and spotty as that's when they have the most flavour and sweetness.

  22. Hi Katie, whilst you could possibly make this in a crockpot, you'd get a completely different texture and look as it would be more of a regular oatmeal than a baked oatmeal.

  23. I am in nursing school and need to get up at 0430 on clinical mornings. Usually eating so early makes me feel sick so I have been trying different recipes that are somewhat plain but nutritious and convenient. I love this idea with peanut/almond butter. Can I mix it in the batter before I bake it? Have you tried that before or do you always put on top? Thank you!

  24. Hey there, you definitely can stir through peanut/almond butter through the batter before baking - I just find it kind of gets a little lost so I rather put it on top!
