Recipe: Banana Bread Baked Oatmeal

Phew, what a busy weekend we had! Busy, but incredibly productive and thought provoking - in case you missed our posts on Friday or Sunday, this weekend was our Church's "Challenge Weekend" with Paul Borden (who came all the way from Sacramento CA from Growing Healthy Churches). It was so incredible to see so many of our church members come together to learn and give their insight on ways our little (but oh so lovable) church can grow. 

It was three jam packed days but Jesse and I finished our weekend off with a date night at the movies where we saw Mr Peabody and Sherman. Definitely a must see - yes, we like kids movies, but this one was really good! And to top off a great weekend, Jesse had yesterday off so we spent the day together again and I made some incredible brownies!

But today, I want to tell you about one of our latest breakfast obsessions here in the SIL house - Banana Bread Baked Oatmeal.

We may as well be monkeys in the SIL house. Seriously, we go through so many bananas. Jesse actually has a monkey onesie (don't even ask, it was clearly a purchase made when Kristy wasn't around) so he's probably already becoming one.

Banana bread is a SIL family fave in any shape or form - muffins, loaves, raw bites, pancakes - and now in baked oatmeal form too!

This recipe has just seven ingredients and is so easy to make. We usually make it the night before and then let it chill in the fridge before slicing in the morning - that way you can either heat it up or eat it chilled, depending on what you prefer! 

It makes four large squares or six smaller slices. Jesse and I like it topped with peanut butter or cream cheese with a dash of maple syrup - but you can top it with whatever you fancy!

And if you feel like getting a little bit fancier, add in some mix ins - we've added in shredded coconut, chocolate chips, cinnamon and nuts and they all work perfectly, just make it your own!

Yield: 4-6 servings

Banana Bread Baked Oatmeal

Banana Bread gets a healthy breakfast makeover with this Banana Bread Baked Oatmeal Recipe. It is low fat, gluten free, sugar free, clean eating friendly and can be made in advance to freeze or store in the fridge!
prep time: 20 minscook time: 45 minstotal time: 65 mins

ingredients:

  • 3 large bananas (about 1 1/2 cups/350g mashed banana)
  • 1 cup milk of choice
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cup (150g) gluten free quick oats or gluten free rolled oats
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • Optional: add in ~1/4 cup honey/maple syrup/sugar if you like things sweet or whatever mix ins you like! (see ideas above)

instructions

  1. Preheat oven to 180°C/350°F
  2. Grease and/or line an 8x8" baking dish with baking paper
  3. Mash your bananas and add in your egg, milk and vanilla.
  4. Add in your dry ingredients and stir to combine.
  5. Leave to soak for about 15 minutes.
  6. Pour your oatmeal into your baking dish and bake for 30-45 minutes or until cooked through and golden on top.
  7. Either serve immediately and spoon out your hot baked oatmeal or leave to cool before slicing.
  8. The oatmeal will stay fresh in the fridge for 2-3 days and freezes perfectly (which means you can keep it for months for a quick and easy breakfast!)

  1. I love banana bread! I just haven't made it in years :/ This looks delicious though! But I would have to try it was a flax egg ;) Haha, but the PB, that totally takes it over the top...it takes anything over the top!

    LOVE banana bread but I've never actually made it myself.... When I was in school my mom would give me a loaf every now and then so I never needed to make some. Not the case anymore! I should definitely give this a try.

    1. Hi there, I don't have the calorie count, however, you can find out the exact nutritional information for the recipe using the ingredients you choose by using an app like MyFitnessPal :)

  8. Do you have to use gluten free oats ? I don’t use them and have just bought minute oats and have regular oats.
