This is the kind of recipe that needs to come with a warning label because it is that good

In fact, when I made it to photograph, I ate six of the nine pieces I made on my own in like 0.5 seconds. Poor Jesse got 2 pieces and my Mum just managed to snag one. 

Even if you're not a big veggie lover, this corn will totally change your mind. It's full of flavour and SO easy to make.

In the past, I've made it in the oven or grilled it on the barbecue - but this time I tried it in my new Air Fryer and was totally impressed. It cut the cooking time by half and before I knew it, I had flavourful crispy corn ready to devour. 

This is the perfect recipe for summer barbecues - or to serve as a side dish with just about anything. 

The smoked paprika adds a slightly smoky flavour that you won't be able to stop eating.... and you'll probably want to smother everything you eat from here on out in the smoky parmesan butter 😜

But don't think you have to wait for summer to enjoy this recipe! If you're like me and hate the cold, turn on your air fryer or oven, crank up the heating and whip yourself up a batch of this corn to enjoy inside, pretending like it's summer 😝

What should you serve it with? We love it with grilled chicken and salad, steak or a Southern, Tex Mex or Mexican inspired dish (as the flavours work really well together!).

ingredients:

  • 2 tbsp (30g) butter, softened
  • 2 tbsp (15g) grated parmesan cheese
  • 1 clove of garlic, crushed
  • ½ tsp smoked paprika
  • Salt and pepper, to taste
  • 4-6 cobs of corn, kept as whole cobs or chopped into smaller pieces as shown
  • To serve: Fresh parsley, finely chopped

How to cook Garlic & Parmesan Butter Roasted Corn on the Cob (in the Air Fryer!)

  1. In a small mixing bowl, combine all of your butter ingredients until everything is mixed together.
  2. Wash and pat dry your corn cobs and then coat with your butter mixture (I find it’s easiest to do this with clean hands – or with a butter knife).
  3. Once all of your corn is coated, follow one of the below cooking methods.
To Cook In the Air Fryer (Method Pictured)
  1. Preheat your air fryer to 200C/390F.
  2. Place a sheet of foil onto the bottom of your air fryer basket (this just makes for easier clean up – but you can skip it if you don’t mind the mess), leaving some room on the sides for the air to circulate.
  3. Place your corn cobs into your basket (for the smaller size I fit three full cobs either as one piece or each chopped into three smaller pieces as shown) and cook for 10 minutes before turning your corn cobs over and cooking for a further 5-10 minutes or until golden
To Cook In the Oven:
  1. Preheat your oven to 200C/390F.
  2. Line a baking sheet with baking paper and set aside.
  3. Place your prepared corn onto your baking tray and bake for 25-35 minutes, turning once and removing your corn from the oven once they’ve browned and are slightly crispy.
To Cook on the Grill:
  1. Wrap your corn cobs in foil and grill on a hot barbecue for ~10 minutes, turning halfway through.
