I have an insatiable appetite for chocolate. 

Forget candy, I'm all about the chocolate... and in my world, the darker, the better.

With Valentines Day fast approaching, I thought I'd share one of our favourite chocolate treats. This chocolate fudge has a little secret. You see, it contains absolutely no refined sugars - and it's stupidly easy to make. 

Oh, and it's so delicious that you'll wish it was your Valentine.

For the last few months, we've constantly had a batch in our fridge and I can't remember the last day I went without having at least a few pieces. 

Forget fancy candy thermometers and pile after pile of messy confectioner's sugar. This fudge recipe has just THREE ingredients but it tastes like a little piece of heaven.

Recipe: Healthy Chocolate Peanut Butter Fudge


I have always been a chocolate girl. In fact, growing up I thought my Pa (grandpa) was the weirdest person on the whole entire planet because he didn't eat chocolate. No chocolate, no chocolate cake, no chocolate anything. 

Whilst Christmas cookies are delicious and spiced recipes are a nice change, I will still always prefer chocolate to any kind of treat. This year, instead of spending hours rolling chocolate truffles or crunching candy canes to make chocolate bark; I decided to make fudge.


And ohhh what a fudge recipe this is, my friends! Combining chocolate and peanut butter in a creamy three ingredient fudge that's also gluten free, low fat, lower sugar and clean eating friendly? That's a Christmas miracle to me! ;) 

Best of all, this recipe can even be vegan and/or dairy free to suit just about everyone (except the chocolate haters, of course) - so it's perfect for sharing any time of the year. It's delicious enough to give as a homemade Christmas gift but versatile enough to work all year round.

Recipe: Healthy Mint Chocolate Fudge (GF & Vegan!)

I have no shame in admitting that Jesse and I are chocolate fiends. We will happily consume anything chocolate-y and delicious (as long as it's gluten free for me) and are always creating new chocolate treats.

A few weeks ago, we had friends over who were talking about the best fudge ever which they'd eaten in New Zealand - and I guess all the mental drooling left fudge stuck in our brains because we both decided we needed to make chocolate fudge and we needed to make it now. 

But not just any fudge... mint chocolate fudge. 


And this fudge wasn't going to be filled with cup after cup of icing sugar or three jars of condensed milk. 

We decided we were going to make a healthy chocolate fudge recipe that was gluten free, refined sugar free, vegan, dairy free and most importantly; easy to make. 

Thus this four ingredient fudge recipe was born! It's a little bit different to normal fudge as it needs to be kept in the fridge or freezer, however, it is still melt-in-your-mouth delicious and also makes a perfect gift for friends and family over the holiday period!

Since first making the recipe, we've been keeping a jar of little pieces in the fridge ever since and we cannot get enough. If mint isn't your thing, don't worry! Skip the mint extract and add in another flavour or your favourite mix ins - or enjoy the fudge on its own!
