Recipe: Easy Gluten Free S'mores Brownie Bars

Easy Smores Brownie Bars - gluten free, low fat, low sugar, healthy dessert recipes, snacks, lightened up, skinny recipes

Do you want to know the true story of how these brownies came to be?

You see, I really really wanted brownies and I wanted to share a new brownie recipe on the blog. I was all set to make them when I realised something; I have way too many brownie recipes on the blog already.

No kidding, I've got;
And that's only a small fraction of the brownie recipes on this blog...

I realised I had a bit of a brownie obsession going on... so what did I do?

I made a cookie base, poured a brownie batter over the top, added marshmallows and called them S'mores Bars so you guys don't check me into brownie rehab.

And I promise, you definitely won't want to throw me into rehab when you try these babies.

The cookie base is soft and crumbly and the perfect pair for the rich, chocolatey brownie topping. The marshmallows add a bit of extra sweetness and texture to create the ultimate s'mores inspired treat - and you won't have any burnt fingertips or smokey clothes afterwards 😉

So let me share the recipe with you! >>

Recipe: 3 Ingredient Flourless Nutella Brownies

Easy DIY Three Ingredient Flourless Nutella Brownies Recipe – 3 ingredients, flourless, no flour, gluten free, one bowl, simple, quick, dairy free, chewy edges, fudgy, gooey, fast dessert recipes

Valentine's Day is tomorrow, and if you're anything like me - you're probably feeling like it snuck up out of nowhere.

Wasn't it Christmas yesterday? Weren't we just celebrating Valentine's Day? How did we get here.

If that's the case, worry not.. because I have the perfect Valentine's Day to share with you. Why is it perfect? Because it's a last minute recipe that uses just three ingredients and is ready to devour in less than half an hour...

And that's where my Valentine's poetry ends, friends (or maybe not... since that rhymed too 😜)

I wouldn't call this recipe a particularly healthy recipe - but Valentine's Day is the perfect day to indulge and treat yourself.

This is a recipe we've made dozens of times - but one I'd almost forgotten about until last week when World Nutella Day rolled around and we had a jar of Nutella sitting around that needed to be used up.

Enter, brownies.

These brownies are stupidly simple. Using just THREE ingredients and no boxed cake mixes or weird hard to find ingredients, they can be mixed up and poured into a pan in just a few minutes and before you know it, you've got a tray of brownies ready to eat.

A tray of brownies with gooey fudgy centres and crispy, chewy edges.

Brownies so good that you'll have to hide them from your husband who would happily devour an entire tray in one sitting.

I have an insatiable appetite for chocolate.

Forget candy, I'm all about the chocolate... and in my world, the darker, the better.

With Valentines Day fast approaching, I thought I'd share one of our favourite chocolate treats. This chocolate fudge has a little secret. You see, it contains absolutely no refined sugars - and it's stupidly easy to make.

Oh, and it's so delicious that you'll wish it was your Valentine.

For the last few months, we've constantly had a batch in our fridge and I can't remember the last day I went without having at least a few pieces.

Forget fancy candy thermometers and pile after pile of messy confectioner's sugar. This fudge recipe has just THREE ingredients but it tastes like a little piece of heaven.

You probably won't want to share it with anyone, however, I promise if you do it might even make someone fall in love with you...

... You know... because they need you around to make another batch 😉

Recipe: The Best Homemade Gluten Free Lamingtons

Easy Gluten Free Homemade Lamingtons Recipe - low fat, gluten free, nut free, dairy free, lower sugar, homemade gluten free sponge cake recipe, healthy australia day recipes

There's a first and a last time for everything in life and this is the first and last time I'm making lamingtons...

Those are the words that came out of my mouth when I first experimented with this recipe.

I had chocolate sauce all over the kitchen, dessicated coconut between my toes, sticky fingers and I was D-O-N-E.

Or so I thought.

One lamington in and I was ready to quit... but I had a whole bowl of icing leftover, so I stuck the second one in determined to use at least half of the mix.

Second lamington down, I stuck in the third - and then I realised it wasn't so bad.

But don't get me wrong, I was still frustrated. I hate sticky, messy recipes and this was perhaps the messiest of all - but I was determined. I was going to succeed at making homemade lamingtons.

At the end, my kitchen was a mess - but I had container after container of homemade lamingtons that actually looked pretty decent.

One by one my family tasted them - and they got their seal of approval.

One by one those lamingtons disappeared from the container.... and one by one the requests came in for more.

This is quite possible the best gluten free lamington recipe - and I want to say the easiest too - but the mess is kind of frustrating.

If you're like me and mess and sticky fingers are not your thing - worry not! I've got the perfect solution for you in the recipe as well. A solution that doesn't involve any dipping or rolling but still tastes seriously, ridiculously good.

So let me share the recipe with you! >>

Recipe: Mint Chocolate Chip Cupcakes (Gluten Free & Vegan)

Easy Mint Chocolate Chip Cupcakes Recipe - gluten free, vegan, low fat, lower sugar, kid friendly, birthday cakes, wheat free, dairy free, egg free

Hello, my name is Kristy and I'm hopelessly devoted to cupcakes.

Yup, I said it.
It's out there, in the open.
Cupcakes are my home skillet biscuit.

Well actually, they're cupcakes... not skillet biscuits... but hey! Bonus points if you know how where I first got home skillet biscuit from all those years ago 😉

But seriously, cupcakes are my favourite. Sure, cake is great and brownies are awesome but cupcakes give you the cake and frosting in one convenient little single serve package.

When I was, say, 13, I really got into baking. My friends thought I was a little crazy baking things from scratch and so did my non-baking Mum - but they never turned their noses up when I asked them to try my creations.

Somehow cupcakes weren't really that popular in Australia when I started baking them... at least not in the way I was making them. I don't really know why Australia was so behind the times but my friends and family thought I was a little crazy baking batch after batch of cupcakes, topping them with mountains of frosting and experimenting with different flavours and mix-ins.

Mint Chocolate Chip Cupcakes were one of the first "unusual" batches I made. Friends and family thought I was a little bit crazy - and then they tasted them.

The rich chocolate base.
The fluffy, slightly mint tasting frosting.
Chunks of chocolate sprinkled on top.
Heaven

Before we finish up 2016, I decided we needed to finish the year on a sweet note - and what better way to do it than by recreating those cupcakes. This time they're gluten free and vegan but they're still seriously, ridiculously delicious.

So let me share the recipe with you! >>

This is a sponsored post for The Reject Shop, however, all recipes, ideas and opinions are entirely our own! Your support of these posts helps us to keep the blog and our recipes free for you and we are so thankful for your support!

Chocolate bark was actually the first foodie gift I ever made for a friend - and something I've been making every Christmas for at least 15 years.

Why? When I was about 8 or 9 my teacher in primary school taught us all how to make Rocky Road (this Super Simple Kid Friendly Rocky Road Recipe actually!) and I fell in love with making homemade chocolate treats.

When our friends at The Reject Shop asked me if I could come up with a delicious recipe for their customers - I knew I had to put together something a little more than that. To help you really wow your loved ones this Christmas, I put together a collection of delicious chocolate treats that are the perfect Homemade Christmas Gift!

All 12 of these Homemade Chocolate Bark Recipes are super easy - all you have to do is melt, pour and sprinkle. They're perfect for making with kids and are what we like to call deceptively simple... that is, they make you look like a bit of a domestic goddess even though it takes all of five minutes to make them.

They're the perfect treat for Christmas and I'm sure you'll fall in love with at least one of these delicious combinations...
So let's get onto the recipes, shall we?!

Recipe: Chocolate and Peanut Butter Cupcakes (Vegan & Gluten Free!)

Vegan Chocolate and Peanut Butter Cupcakes - healthy, low fat, gluten free, peanut butter frosting, egg free, dairy free, peanut butter cup cupcakes, healthy birthday cakes

So last Friday was my birthday and last week I learned that my chocolate and peanut butter obsession is way worse than I thought.

You see, my love for chocolate and peanut butter is SO strong that I misread an entire conversation with Jesse.

He was at work and texting me and I was asking him what frosting I should make for my birthday cupcakes, whilst at the same time he also asked me about what I wanted for my birthday... and this is how the conversation went;

K: "I already told you, I don't want anything for my birthday"
J: "I just got you silly stuff"
J: "and chocolate and peanut butter"

YESSSSSSSSSSSSSSSSSSSSSSSSSSSSSSSSSSSSS! says Kristy. He got me chocolate and peanut butter!

Um, yeah, no.... you just misread that reply.

You see, I watched Amazon packages arrive for Jesse and thought YES! Peanut butter only to mention something the day before my birthday and have him say "oh what? no... I meant chocolate and peanut butter frosting...."

BUH BOW!

As soon as I said it both Mum and Jesse said "NOOOOO! Why didn't I think of that! That would have been the perfect thing to buy you".

But that amazon package? A unicorn head (not even kidding.... you may have seen the video on our Instagram story).

Luckily I took matters into my own hands to make sure I had both chocolate and peanut butter on my birthday and made these ridiculously delicious chocolate and peanut butter cupcakes - without paper liners because I am the best wife ever (as Jesse HATES them!).

So let me share the recipe with you, too! >>
