I’m a cheap ass by nature. Anyone who knows me knows that’s true - but it’s saved me a lot of money over the years.


It’s the reason we took up 110 sqm of tile up ourselves by hand. It’s the reason we spent our weekend hammering away at a giant rock in our backyard (also COVID lockdowns contributed to that 😅).


And it’s also one of the reasons I make so many different recipes…. Including this one. 


You see, I’d been seeing advertisements for Butterbing’s delicious gluten free cookies for weeks - and when their online store was launched, I was totally planning on buying some…. Until I realised I would need to spend a minimum of $78 on cookies that I could make myself for less than $5.

So what did I do? 


I got to work in the kitchen, of course!


But because we’re also stuck in lockdown at the moment, I didn’t want to go to the shops to pick up any ingredients, so whilst these cookies aren’t an exact duplicate, they may just be even better because they are seriously, ridiculously good.

So good, in fact, that we did a COVID safe cookie drop to my sister and her boyfriend and we hadn’t even left their street when they called us gushing over how good they were. 


Soooo friends, being a cheap ass totally has its perks. Because for less than $5, I didn’t just have 12 cookies, I had 15 and a whole lot of satisfaction because I’d made them myself.

Today is Jesse's birthday - but I am totally bummed because we don't actually get to spend it together!

You think we'd be used to celebrating birthdays apart after doing it for 5 years... but we're now used to being together, so whenever he's working interstate it totally stinks. 

But because it's not a birthday without cake, we celebrated his birthday a little bit early with plenty of cake - and we're planning on celebrating him again this weekend with lots more cake and a barbecue with friends - so it's not all bad!

This cake totally makes up for it.

A few months ago, when I asked Jesse what he wanted for his birthday cake this year, he mentioned that he wanted a Strawberry Shortcake Cake - so I set to work creating the ultimate strawberry shortcake cake - that was also gluten free, because he didn't want me to miss out!

Creating a soft and fluffy gluten free cake can be a bit of a challenge - but eventually I managed to perfect it and came up with the recipe I'm sharing today. 

My #protip? Buy these cake strips. If you find your cake edges are often too crispy, or your cakes puff up too much in the middle/bake unevenly, these cake strips are a lifesaver. They are seriously my new favourite thing.

Oh and #protip number two is probably don't make a three layer cake, unless you want all the mess that comes with it 😜 It looks impressive, but cutting into it is seriously messy!

Here is what Jesse's early birthday cake looked like (obviously not the photographed recipe version). It's the same cake recipe - only I put the frosting into a piping bag and piped it on top instead of simply spreading it - and did two layers instead of three. Much neater and so much easier to slice.

Okay yes, I'm posting another carrot cake recipe. 

But that's okay.... you know why? Because Easter is coming and that's pretty much the ultimate excuse to make all the carrot cake-y things in the world. 

Usually I don't make whole cakes unless we're having people over because it just feels like a waste, however, last week I decided I needed to retest this recipe once again to share with you (truth: I may retest my recipes so many times before posting them solely because it means I get to eat them) and let me tell you, it totally changed my mind on the whole not-making-cakes-unless-we-have-company deal.

Hello, my name is Kristy and I'm hopelessly devoted to cupcakes. 

Yup, I said it. 
It's out there, in the open. 
Cupcakes are my home skillet biscuit.

Well actually, they're cupcakes... not skillet biscuits... but hey! Bonus points if you know how where I first got home skillet biscuit from all those years ago 😉

But seriously, cupcakes are my favourite. Sure, cake is great and brownies are awesome but cupcakes give you the cake and frosting in one convenient little single serve package. 

When I was, say, 13, I really got into baking. My friends thought I was a little crazy baking things from scratch and so did my non-baking Mum - but they never turned their noses up when I asked them to try my creations. 

Somehow cupcakes weren't really that popular in Australia when I started baking them... at least not in the way I was making them. I don't really know why Australia was so behind the times but my friends and family thought I was a little crazy baking batch after batch of cupcakes, topping them with mountains of frosting and experimenting with different flavours and mix-ins.

Mint Chocolate Chip Cupcakes were one of the first "unusual" batches I made. Friends and family thought I was a little bit crazy - and then they tasted them.

Before we finish up 2016, I decided we needed to finish the year on a sweet note - and what better way to do it than by recreating those cupcakes. This time they're gluten free and vegan but they're still seriously, ridiculously delicious.

Recipe: Chocolate and Peanut Butter Cupcakes (Vegan & Gluten Free!)

So last Friday was my birthday and last week I learned that my chocolate and peanut butter obsession is way worse than I thought. 

You see, my love for chocolate and peanut butter is SO strong that I misread an entire conversation with Jesse. 

He was at work and texting me and I was asking him what frosting I should make for my birthday cupcakes, whilst at the same time he also asked me about what I wanted for my birthday... and this is how the conversation went; 

K: "I already told you, I don't want anything for my birthday"
J: "I just got you silly stuff"
J: "and chocolate and peanut butter"

Um, yeah, no.... you just misread that reply.

You see, I watched Amazon packages arrive for Jesse and thought YES! Peanut butter only to mention something the day before my birthday and have him say "oh what? no... I meant chocolate and peanut butter frosting...." 

BUH BOW!

As soon as I said it both Mum and Jesse said "NOOOOO! Why didn't I think of that! That would have been the perfect thing to buy you". 

But that amazon package? A unicorn head (not even kidding.... you may have seen the video on our Instagram story). 

Luckily I took matters into my own hands to make sure I had both chocolate and peanut butter on my birthday and made these ridiculously delicious chocolate and peanut butter cupcakes - without paper liners because I am the best wife ever (as Jesse HATES them!).

Recipe: Lightened Up Cookies & Cream Cupcakes (Gluten Free & Vegan)

Sooo, we have a little bit of an oreo thing going on at the moment. 

It all started with our Lightened Up One Bowl Oreo Brownies Recipe which convinced Jesse that oreos have a place other than simply in a glass of milk. Those brownies convinced him that oreos were indeed a worthy addition to any baked good - so he let me put them in other things.

We've been experimenting with lots of different oreo recipes, however, this one has to be a standout. These cupcakes takes ridiculously decadent - but they have a secret. 

Not only are they lower in fat, sugar and calories - they're also gluten free and vegan.

The frosting isn't so healthy, however, it is still vegan and a little bit goes a long way so you can still indulge in a cupcake guilt free (though, I think every food should be eaten guilt free!).

The cupcakes are soft and moist and fluffy and all sorts of cupcake heaven whilst the frosting is creamy and filled with chunks of (gluten free) oreo pieces.

But er... if you want to put this frosting through a piping bag, I'd suggest not making the cookie pieces as chunky as the ones in the photos.

You see, the first time I was quite efficient with my cookie crushing... but the second time I guess I just wanted more cookie chunks as they certainly weren't crushed enough... and I busted three piping bags ;P 

Luckily, I buy the el' cheapo plastic piping bags because there are few things I hate more than cleaning the fabric ones :P 

But whichever way you choose to do your frosting, it's guaranteed to be delicious - and these cupcakes suit a huge range of intolerances and allergies, making them perfect for parties!

Recipe: Lightened Up Salted Caramel Topped Brownies

Whilst I loveeeee celebrating other people's birthdays, I'm not too fussed about celebrating my own. 

I don't know what it is, but now that I'm older there's only really one thing I care about on my birthday...... cake

But not any sort of cake. Gone are the days of boring packet cake mixes and store bought frostings. Now that I bake my own birthday cakes, I look forward to my birthday each year because it means I can come up with a new delicious cake recipe to enjoy with my friends and family.

Last year was my Healthy Coffee Cheesecake Recipe with a Chocolate Cookie Crust and the year before our Healthy Chocolate Cake Recipe, however, this year I celebrated with two sweet treats. The first, our favourite Healthy Butter Cake Recipe made into mini cupcakes and topped with fresh strawberry buttercream frosting (will share that soon!!) which we devoured on Wednesday (my actual birthday) and then on Saturday we had some friends over for dinner and I made these ridiculously delicious Healthier Salted Caramel Brownies <3 

I'm not kidding when I say ridiculous, friends. These brownies are the bomb dot com multiplied by about ten thousand and forty three....

The super simple gluten free brownie base is topped with a layer of creamy caramel deliciousness that sets perfectly so your brownies are easy to slice. Just a teeny tiny piece is enough to satisfy, however, I won't blame you for going back for more ;) 

I know what you're thinking; but caramel isn't easy to make. Well, whilst it may not normally be an easy task, I've made it super simple and there are no candy thermometers or fancy methods needed - just two minutes needed on the stove top!
