I've always loved cooking - and I've always loved experimenting with different cuisines. 

One of the first dishes I decided to make completely by myself was paella. I'd seen it on TV, but had never eaten it or seen it in person - so I decided to make it myself.

I certainly wasn't Spanish, had no idea what a paella should taste like.. or even what the cooking process looked like beyond the snippets I saw on Masterchef - but I decided I needed to learn.

That's kind of the attitude I have with all food. So naturally, when I married a guy from Louisiana, I needed to learn how to cook Southern food.

You see, every time we're in Louisiana, Jesse will eat red beans and rice at least once - but I didn't think I'd be able to make it here in Australia as we couldn't find the same andouille sausage.... but I found the perfect alternative.

Cornbread totally weirded me out the first time I made it. 

You see, growing up in Australia, I just didn't know anyone who ate cornbread or made it... and whenever we were on holidays in the US, we never really came across it. 

But then I fell in love with a Southern guy and suddenly found myself making all these foods I'd never even thought of making before I met him.

I mean really. The first Christmas we spent together, I asked him what traditional Christmas foods his family would eat for Christmas and he said "dressing" and I was like "err.... on salad?". 

Nope, not salad. Jesse was talking about a cornbread concoction of vegetables and eggs and cornbread, baked up and served in big slices. 

Combine this with making my first ever pumpkin pie (and being so confused as to how a pumpkin pie could actually taste good as I'd only ever eaten pumpkin as a savoury food - oh, how wrong I was) and my brain was pretty much imploding...

And let's be real, I was in serious foreign territory. 

My pumpkin pie may have been delicious, but my first ever batch of cornbread was flat and grossly crunchy and resembled more of a hockey puck than an edible delight.

But I was determined to conquer it.... and after many, many, many failed batches I did - and I've been keeping it from you.. 

Not on purpose, just because it felt a little too plain and boring... but sometimes boring things are actually the most delicious - so let me introduce to you The Best Gluten Free Cornbread Recipe.

I never realised just how much being in a relationship with someone from 'the South' would impact my cooking. 

You see, as a kid I'd travelled to the US plenty of times on vacation - and whilst the portion sizes were so much bigger, most of the food was pretty similar to what you could find here in Australia - so why would this Southern boy eat any differently? 

Ohhh boy was I wrong. 

For the past 11 years, I've had a crash course in Southern cooking. Marrying a boy from Louisiana has meant that I now know how to make jambalaya, know what crawfish etouffee is and can correctly pronounce boudin.... among many other things.

But it wasn't all that easy to begin with.

You see, the first time Jesse came out for Christmas, I thought I'd make some Southern dishes so my family could experience some of his family's favourites - and Jesse would feel more at home. 

But I was totally out of my depth. 

The first time I made cornbread, I was sure things were going to go wrong. It looked like cake batter, felt like cake batter - but it definitely did not taste like cake batter... and surely those crunchy cornmeal bits would be awful?! 

And then I decided to make pumpkin pie too - which was the opposite of my should be sweet but is savoury dilemma. You see, I'd only ever eaten pumpkin as a savoury option - so making a dessert with pumpkin sounded like a disaster waiting to happen. 

Luckily, after a few attempts, I managed to nail the perfect pumpkin pie - and after a few flat pans of cornbread and a few kitchen disasters, I managed to nail a perfect fluffy cornbread recipe too.

... and the girl who once though cornbread was a terrible idea is cornbread's biggest fan... seriously, I could eat cornbread all day every day and not get tired of it. 

But recently I decided I wanted to do something different with cornbread. I was thinking about making my Easy Gluten Free Ham and Cheese Strata Recipe, but decided I wanted something different - and then wondered if I could swap the bread cubes for cornbread cubes.

Deciding to switch up the flavours too, I baked a pan of cornbread, cut it into cubes and then made an egg mix full of garlic, cheese and herbs and mixed it all together. This could have gone terribly wrong - but luckily it went deliciously right and became a new family favourite. 

Perfect for brunch or a side dish, I'm sure it will be a favourite in your house too!

Inspired by a classic chicken pot pie but made 100x easier, this pasta recipe is super quick to make and will be loved by the whole family. Sneaking in veggies and coated in a rich and creamy (but secretly healthy!) sauce, it's a recipe that you'll be making over and over again.

Pasta, however, is quick and you can boil the pasta whilst you get the sauce ready - meaning this recipe can be made and on the table in less than 20 minutes.

I photographed the regular version so you can enjoy them all year round - but I made a batch with crushed candy canes mixed through and they were the perfect healthy holiday treat.

  • Know what "fixing to..." meant 
  • Sound like a weird combination of Australian and American (accents rub off, friends... both Jesse and I have this weird confused accent because we've each taken on eachothers ðŸ˜›) 
  • Know that people eat squirrels... or turtles.... or a wide variety of other creatures I did not know people ate
  • Have ever travelled to Louisiana
  • Have ever celebrated Thanksgiving.

Recipe: Easy Vegan DIY Coffee Creamer (Or Sweet Cream!)

One question I'm often asked is whether I'm annoyed that I have coeliac disease and food intolerances - and apparently my answer is a little surprising. 

You see, whilst there's many times where I wish I could eat just like everyone else, share food without questioning the ingredients and enjoy birthday cakes with my friends - most of the time I'm actually really grateful. 

At first, that wasn't the case, however, I quickly realised that my own experiences equipped me to help others. 

How? Well because I've already walked a mile (and then some!) in their shoes.

That's exactly the reason I started posting recipes on Southern In Law - and exactly the reason I get SO excited when readers like Michelle get in touch with me to see if I can create a recipe for them. 

Michelle is one of those SIL readers who is an absolute gem. She is always liking and commenting on our Facebook posts and always puts a huge smile on my face. Last month, Michelle sent a message to our Facebook page asking if I could create a recipe for a non-dairy coffee creamer that was simple and delicious - and also suited her dietary needs. 

As someone who has never ever used coffee creamer (it's not really common in Australia), let alone created a recipe for it, it was a challenge I was SO excited to accept.

After creating the cashew based sauce for my Healthy Vegan Baked Mac and Cheese Recipe I was inspired to try and make a sweet cashew cream recipe - and that's exactly what this DIY vegan creamer recipe is! 

Best of all? It's super simple and uses nothing other than a blender. No annoying nut milk bags or straining - just soak, blend and enjoy!

Whilst it's perfect in coffee (though, be sure to read the note below) it's also great in tea and can be used in a variety of ways! I've been serving it up with cakes (instead of thickened cream) and in any sweet recipe where you might usually use cream.

It's an incredibly versatile recipe that we've fallen in love with, however, whatever you do - be sure to try it on oatmeal too! It's so creamy and delicious and I'm sure you'll find a bunch of uses for it too. 

In fact, when I gave some to Jesse to try the first time his response was "um... don't bother sealing the lid on that jar because I think I'll just drink the whole thing".
