We are currently on vacation at Disneyland in California, USA - but I didn’t want you to miss out on new recipes while we were away, so I’ve been busy creating a whole lot of deliciousness to share whilst we’re away from home!

These Cashew Cookie Dough Bliss Balls Recipe are one of those recipes - and I was actually eating them yesterday on the plane ride here!

Sometimes the simplest recipes become your favourite - and this is definitely one of those recipes. 

Bliss Balls are one of my favourite healthy snacks to have on hand - and they're also one of my favourite healthy desserts to share with friends. Not only are they super simple to make, they're seriously delicious - and I've found that even the pickiest eaters love them. 

I first made this recipe when we were having friends over for lunch who had a variety of different dietary needs and I needed a simple (but healthy and allergy friendly!) dessert that everyone could enjoy.

So, I made a few batches of different bliss ball flavours (including this one), put together a fruit platter, added some chocolate and the bliss balls and everyone dug in!

Stored in containers on the top shelf of our fridge, they're there for easy, healthy snacks - or those times where I want something sweet but don't want a sugar rush. 

Usually you'll find these Mint Chocolate Bliss Balls or these Salted Caramel Bliss Balls, but lately there's a new favourite in town.

These Super Seed Bliss Balls are the ultimate healthy snack as they're jam packed with nutrients - and are made with just 5 simple ingredients.

Super Seed Bliss Balls Recipe - Nut Free Paleo Bliss Balls Recipe, Gluten Free, Grain Free, Sugar Free, Vegan

Hemp Seeds pack a protein punch, adding 25 grams of protein to the recipe as well as all nine essential amino acids (making them a complete source of protein - a must if you eat a plant based diet!), omega-3 fatty acids, fibre, vitamin E, magnesium, phosphorus, potassium, iron, zinc and b-vitamins. They're also said to boost heart health, support brain health, reduce inflammation and improve skin health as well as reducing the symptoms of PMS and menopause.

Sunflower Seeds are incredible for skin and hair health as they're full of vitamin E, copper and essential fatty acids and are also rich in vitamin C, phytosterols (cholesterol-lowering compounds), fibre and magnesium, making them great for heart health, bone health, digestion and mental health.

When I was a kid, I was really weird... (actually, let's be honest, I'm still weird now... but imagine even weirder than I am now).

Why? 

Because I didn't like cake.. or cookies. 

I didn't really like much of anything, to be honest, but I would happily eat cookie dough and cake batter.

If you open our fridge at any given time, you'll see at least one container filled with bliss balls, ready to devour. 

On the top shelf of our freezer? More bliss balls, for those very rare occasions where we run out of ones in the fridge... or when I desperately want a specific flavour but need to rush out the door. 

OBSESSED, I tell you... but when they taste this good, how can you resist?!

These Paleo Lemon Cashew Energy Balls are seriousssllyyyy delicious and so easy to make. 

All you'll need to make them? Just 4 ingredients; a fresh lemon, dates, cashews and a little bit of coconut flour (though I've also included a coconut free option below for those who don't like/can't have coconut, making this a three ingredient recipe!). 

A few minutes in the food processor, a little bit of rolling and you'll have a whole container of delicious bliss balls to eat however you choose. We have them at almost every hour of the day. As a mid morning snack, lunch dessert, afternoon tea, dessert - there's never really a wrong time to eat them. 

They're sweet, full of flavour and no one will ever know they're so healthy!

Life has been a little bit crazy lately. I constantly have 10 million things to do and my to do list keeps getting longer and longer. 

If I didn't have a holiday planned in 50 days, I'd probably need to check myself into the funny farm because I don't know how much longer my brain can cope. 

But when life gets crazy like this, I've learnt that you always need to give yourself a little grace - and often times that means scrapping things from your to do list that you'd normally do. For me, that's scrapping elaborate recipes and sticking to the quick and easy one. 


Why? Because I just don't have the time to spend hours in the kitchen or watching something bake away in the oven. 

Enter these Raw Double Chocolate Bites. They're super quick to make and the perfect snack for those extra busy days. I've been making them at night (usually multitasking whilst pasta/rice/baked veggies are cooking away) and keeping them in a container in the fridge to grab on my way out to meetings or when I need something sweet (because let's be real, my busy brain is like caffeine, chocolate... NOW). 

It's one of those recipe that you'll make again and again and never get tired of. Why? Because... well... does anyone ever get tired of chocolate?

I want to start off by clarifying something; these bites are not donuts. They're not crumbled up bits of donuts smooshed together, they're not made with flour and they're not going to taste like a fried donut because they're not fried and not made with any of those ingredients.

But when I made this recipe for the first time? This is what was said; "Wow. These taste like donuts".

So the name stuck.... because it's so much easier to say than listing all of the ingredients and adding balls at the end. But I digress!
