Recipe: Easy Cocoa Roasted Almonds (Gluten Free + Vegan!)

So, whilst this recipe may be perfect for Valentine's Day, it wasn't created with Valentine's Day in mind at all... 

In fact, it all started on a plane.... 

You see, when you're a coeliac and have to eat gluten free, travelling can be difficult. Trying to find safe options that aren't cross-contaminated with gluten or filled with gluten that you didn't know was there because the ingredients list is in a foreign language. Wondering whether supermarkets will have a big gluten free range or whether you'll be living on rice cakes and greek yogurt for the next three weeks. Going through security lines as watching the officers faces when they see each one of your carry on bags is full of food and saying "yes... that's all for me". 

When that's your life, travelling is a well planned out, thought out process which involves plenty of tupperware containers and pre packed snacks.... but sometimes travelling surprises you... 

You see, we were on an American Airlines flight from Dallas to Los Angeles when Jesse ordered a snack box - and when it arrived I found it was full of gluten free food. Poor Jesse quickly lost half of the items in that snack box as I claimed them as my own (don't worry, he had other food... I'm not quite that selfish). 

And one of those items were cocoa roasted almonds.

It was a teeny tiny packet full of the things dreams are made of. They were sweet, crunchy and oh so delicious. 

So what was one of the first things I had to do when I got home? Recreate them, of course! 

In true Kristy fashion, I wanted to make this recipe as simple as possible and as healthy as possible - and, dare I say it, I totally nailed it. These cocoa almonds require just four ingredients - and they take only 17 minutes to make (and yep, we totally timed it). 

The hardest part of the whole process? Waiting for them to cool so you can devour them - and resisting the urge to eat the ridiculously hot toffee pieces that are left on the tray after you pour the almonds into the cocoa (please, resist the urge... I didn't and let's just say my fingertips lost a few layers of skin...).

But basically, these are SO delicious that gifting them to someone else is the greatest expression of love in the world because you will not want to share them.

Wasn't it Christmas yesterday? Weren't we just celebrating Valentine's Day? How did we get here. 

If that's the case, worry not.. because I have the perfect Valentine's Day to share with you. Why is it perfect? Because it's a last minute recipe that uses just three ingredients and is ready to devour in less than half an hour...

This is a recipe we've made dozens of times - but one I'd almost forgotten about until last week when World Nutella Day rolled around and we had a jar of Nutella sitting around that needed to be used up. 

Enter, brownies.

Brownies so good that you'll have to hide them from your husband who would happily devour an entire tray in one sitting.

Recipe: Vegan Peanut Butter Pretzel Chocolate Bark (Gluten Free & Sugar Free!)

Valentines Day is fast approaching and whilst Jesse and I don't really celebrate the holiday, we do celebrate chocolate - so it's a good excuse to put together some delicious chocolate recipes to enjoy year-round. 

This Peanut Butter Pretzel Chocolate Bark was an experiment gone oh so right. You see, I had a bunch of gluten free pretzels laying about that needed to be eaten, however, I didn't want to just eat them on their own or use them as a dipping vessel. 

At the same time I really felt like making something with chocolate and peanut butter - only to realise that chocolate, peanut butter and pretzels really were a match made in heaven.

So I got to thinking. At first I thought about making moulded chocolates, however, to be honest that felt like a little too much effort for this lazy girl - so I settled on chocolate bark. 

You see, chocolate bark is one of those deceptively simple creations. It looks really impressive - but really all you did was pour a mixture onto a tray, stick it in the fridge and call it a day. 

It takes so little effort but tastes so incredibly amazing - and I decided to lift the amazingness to a whole new level.

Instead of melting regular ol' chocolate and mixing things in - I decided to make my own chocolate bark from scratch. A gluten free, vegan, sugar free and dairy free chocolate bark that still only required melting and mixing. 

And oh what a success that experiment was. So successful, in fact, that there's now a designated chocolate bark place in our freezer where a container must sit at all times filled with chocolate bark deliciousness. 

That container gets opened at least a couple of times each day when we're in need of a healthy chocolate fix.
