Recent Things: A Jam Packed Week Full of Fun (and Chocolate)


Hey! Friday has snuck up on me this week as the extra long weekend has left me wondering what day it is all week long.... but to be honest, I don't think anyone ever complains when the weekend comes around quicker than expected, do they?

We have been seriously busy in the last week and have had so much fun - so I have heaps to share with you!
Here's what we've been up to recently! >> 



Haigh's Gluten Free Chocolate Easter Eggs Australia


Recent Deliciousness: Easter Eggs, specifically these Haigh's ones. HOLY HEAVEN IN AN EGG SHAPED PACKAGE, how have I never had Haigh's chocolate before? I don't think I can ever eat any other milk chocolate again :P 

We had some super sweet friends give us these babies for Easter as they're gluten free (friends who give you gluten free chocolate are clearly friends for life!) and they're amazing.

Georgy Girl The Seekers Musical Sydney

Recent Planning: Another week full of fun next week! We're heading to Georgy Girl the Musical as well as a movie premiere and this weekend is Jesse's birthday and the plan is to see Zootopia in Gold Class (we're big kids and like "family" movies more than adult movies :P), enjoy a night at the foodies night market tonight with our friends, head to the farmers market on Saturday and possibly add in a round of bowling as well.  

When I asked Jesse what he'd like for his birthday cake/birthday dinner, he told me that he wanted cheese pizza from Costco for dinner (because apparently that's the best cheese pizza ever) and a Matilda inspired Chocolate Cake for dessert so that's what we're having... well.. obviously this coeliac girl will be making her own pizza!

For those interested in Georgy Girl, it opens in Sydney tomorrow night at the State Theatre until May 15th and then moves to Perth on July 8th until 24th at the Crown Theatre.

Mini Pancake Brunch at Church

Recent Realisation: I hate making pancakes, but I love my church family. On Easter Sunday I made (what felt like) five million and sixty three little pancakes for a pancake brunch after church! They were topped nutella (not pretty but seriously delicious), whipped cream and jam and maple syrup and the above was just a tiny bit of what was put out. 

Somehow every single pancake was devoured! I might have burned myself a dozen times making them and I may never make another pancake again but it was so worth it!

Recent Laughs: This tea towel I spotted whilst out shopping earlier in the week; 
They say that you lose your mind when you get older. What they don't say is that you won't miss it very much. 

Weevils, weevils everywhere meme

Recent Cringeing: The other day I went to grab a packet of brown rice out of the cupboard and headed over to the stove to cook it, only to open the packet and have a moth FLY out of the bag at me. I screamed, quickly closed the packet and headed outside to inspect it and it was full of disgusting weevils. 

I swear they are seriously the most disgusting thing on the planet - and I totally had the heebie-jeebies for the rest of the day! BLEEEEEEEEEUUUUUUUUUUUGHHHHHHH! Thank goodness it was only that one packet of rice that they were in as I was considering burning down the whole kitchen :P 

Double Date Putt Putt Golf at Putt Planet

Recent Fun: Last night we decided to do something out of the norm and head out on a "school night" to play putt putt golf! Our friends Tom and Mel joined us and we had so much fun we've already decided to do it all over again next week and head out for a night of bowling!

Healthy Strawberry Cheesecake Swirl Blondies Recipe

Recent Obsession: These Gluten Free Strawberry Cheesecake Blondies that I posted this week. Oh my wordddddddddd, these are seriously ridiculously delicious. Do yourself a favour and make them ASAP! 



Recent Eats: As always, there's been lots of delicious creations on our dinner table this week!

Friday night we had our annual Good Friday seafood feast, however, as none of it was gluten free (my parents do all the cooking), I had our all time favourite Healthy Cheesy Tuna Pasta Bake Recipe for dinner!



On Saturday night we felt like steak so steak it was! This time served up with ALL THE VEGGIES and our Healthy Avocado Quinoa Recipe.



On Sunday night we tried something different with this Chicken Cordon Bleu Rice Bake which was seriously delicious! It was a random idea that totally worked so we'll definitely be making it again!



On Monday we had friends over for lunch and I was seriously lacking in the ingredients department for dinner so our Healthy Chicken and Bacon Rice Bowl Recipe came to the rescue! We didn't have any spinach which I missed, however, I added some avocado post insta-shot and that was a seriously good idea!



On Tuesday it was, of course, Mexican Martes and this girl still wasn't feeling like tacos. Luckily I'd posted our Healthy Taco Spaghetti Recipe on the blog on Monday and reminded myself just how good it was so I made that again! This time with gluten free elbow shaped pasta because I'd forgotten to buy more GF spaghetti!



On Wednesday I was feeling like fish and so I whipped up one of our go-to's; our Healthy Cheesy Baked Fish Recipe. It's a recipe that never gets old and it was the perfect quick and easy dinner before heading out to babysit for the night!



Thursday - last night we needed another quick and easy dinner as we were heading out to play putt putt golf with our friends so I made a Kristy-fied version of Chicken Cacciatore with brown rice and lentils. Instead of a tomato based sauce, I used our Ultimate Nomato Sauce Recipe instead!
