Recipe: Baked Banana Oatmeal

Healthy Baked Banana Oatmeal
I love breakfast bakes, I have over 10 different types that I make on a regular basis. Oatmeal, buckwheat, cornmeal, millet grits, hot cereal, cocoa, brown rice - you name it. If it's able to be baked into something, I've made it into a breakfast bake. 

Sometimes, however, I don't have the time to spend making a breakfast bake or I don't feel like waiting around for half an hour while it bakes - but they're so delicious I wish I could! So I found a solution to my problem - make them in advance and freeze them for a quick and easy breakfast that just needs a slather of peanut butter or is delicious on it's own. 

My new nannying job means I'll have to be up early and at the house by 7am, so I need a quick breakfast to eat before I go. These bakes are perfect, just leave them to thaw in the fridge overnight or pop them into the microwave to heat up.

Baked Banana Oatmeal
- makes two but can easily be multiplied
A delicious breakfast that can be eaten fresh out of the oven or made in advance and frozen for mornings when you need a quick breakfast! 

1 cup rolled oats (I use gluten free oats - bought from iHerb
1 tsp cinnamon
1/4 tsp salt 
1/2 tsp baking powder
3 tbsp applesauce
1 medium banana, mashed
3/4 cup milk of your choice

Preheat oven to 180°C/355°F.
Grease or line two individual baking tins or ramekins.
In a large bowl, mix rolled oats, cinnamon, salt and baking powder.
Mash banana in a separate bowl, add applesauce and milk and pour into dry ingredients.
Mix all ingredients thoroughly and leave to sit for 5 or so minutes until some of the liquid absorbs. 
Pour the oatmeal mixture into two individual baking dishes, topping with extra banana slices if desired. 
Bake for 30-40 minutes or until golden and set and the edges start to pull in from the sides. 

You can easily adapt this recipe by adding in fruit, nuts, coconut or even chocolate chips - the decision is yours! I also make a apple version which I will post if anyone wants it!
If you don't like or have oats, these also work with quinoa flakes!

    1. I know! I was excited when it was accepted, you know how picky they can be! Banana oatmeal is one of my favourite breakfasts, it has just the right amount of sweetness and it's filling and warm.

  2. TasteSpotting is the WORST, they hardly ever accept my photos - they always reject them because of "composition"!! So annoying!

    I've been having banana & peanut butter oatmeal lately. I make oatmeal the normal way, then add a spoon of pb and slices of fresh banana. :)

    1. This is my favourite way to make oatmeal! So simple but delicious - even better if you mash half the banana into the oatmeal!
