It's now February and we're soaking up every last second of summer by having as many barbeques and picnics with our family and friends as possible.
For the last two weeks, we've been sharing our favourite Asian Inspired Barbeque recipes thanks to our friends at Chang's who make it easy to create authentic Asian food at home. First there was our Asian Noodle Salad with Creamy Peanut Dressing, followed by these delicious Asian Inspired Chicken Burgers with Creamy Mayonnaise and Asian Slaw and today I wanted to wrap up the recipes with a giveaway and this delicious Asian Chicken Salad Recipe (with the most amazing Healthy Asian Marinated Chicken Recipe!)
The salad is the perfect mix of colours and flavours with fresh carrot, purple and white cabbage, baby spinach leaves, shallots and a deeeeeeeeelicious honey sesame dressing with a touch of orange juice for sweetness and that perfect salty sweet balance.
The chicken marinade is one that is so easy but so impressive - with a mix of orange juice, honey, rice wine vinegar, Chang's gluten free soy and Chang's sesame oil for an incredible flavour hit and a sticky, caramelised coating.

Asian Style Chicken Salad with Marinated Chicken & Honey Sesame Dressing
serves 2-4 | low fat, gluten free, refined sugar free, clean eating friendly
For the Asian Marinated Chicken:
2 skinless chicken breasts, sliced as desired
2 skinless chicken breasts, sliced as desired
1 tbsp honey
1 tbsp rice wine vinegar
1 tbsp orange juice
1 tbsp Chang's sesame oil
- Combine your marinade ingredients in a medium container and add in your chicken breast.
- Leave to marinate for at least one hour (or simply leave to marinate overnight before your barbeque!) to soak up all of the flavours.
- Grill on a hot barbeque or non-stick frying pan until cooked through - cooking about 1-3 minutes a side, depending on the thickness of your pieces. Cook for as long as needed to cook through your chicken.
For the Honey Sesame Dressing:
2 tsp honey
1 tbsp rice wine vinegar
1 tbsp Chang's sesame oil
2 tbsp orange juice
Pinch freshly grated ginger (optional)
- Mix together all of your dressing ingredients and set aside ready to dress your salad
For the Asian Salad Base:
1 small red cabbage, shredded
1 small green cabbage, shredded
~3 cups baby spinach, left whole or chopped
2 large carrots, julienned or peeled into strips
1 shallot/green onion, finely sliced
Optional: fresh orange segments or other vegetables of your choice

My ultimate summer salad combo is a watermelon and feta salad, however, I'm a big fan of creating what we like to call "kitchen sink salads" and throwing together whatever we have in the fridge that sounds delicious!
