This recipe is not a healthy one, but it is a delicious one - and a gluten free version of a classic Aussie fave. 

This Caramel Slice Recipe is my sister's favourite. Since she moved out, I kind of forgot about it until I was digging through one of the first recipe books I had put together that was filled with my own recipes - and I decided I needed to make some ASAP. 

I'd never before made a gluten free version, but this adapted version is so good you'd never even guess it was gluten free.

Recipe: Gluten Free Weetbix ANZAC Biscuits

ANZAC Biscuits get a gluten free makeover with this Easy Weetbix ANZAC Biscuits Recipe. Often times people who have to avoid gluten also have to miss out on all the delicious treats - but that doesn't have to be the case. 

The first ANZAC Day after I'd be diagnosed with coeliac disease, I found myself attempting all the gluten free ANZAC biscuit recipes I could. My kitchen was a mess of coconut, quinoa flakes, rice flakes, weird flour mixes, and a whole lot of failed cookies. 

The quinoa flakes were horribly bitter, rice flakes were way too hard and making them just with flour just didn't work. 

Later on, I found out I could safely eat gluten free oats (read more about that here), however, as gluten free oats aren't a thing in Australia (as 1 in 5 coeliacs will have a reaction to uncontaminated oats similar to how they react to gluten), I know there are plenty of other coeliacs still struggling to find the perfect gluten free ANZAC biscuit recipe.

So I got to experimenting. 

And last month, I had an a-ha! moment, which was really more like a "you idiot! Why didn't you think of this sooner?!" moment - and came up with the perfect recipe. 

This ANZAC Biscuit Recipe uses crushed gluten free Weetbix - making them the perfect way to use up the crumbly bits at the bottom of the Weetbix box - whilst also creating the most perfect gluten free ANZAC biscuit recipe. 

These ANZACs have become a family fave. So much so that Jesse now asks for them over a traditional oat version. They're crisp and chewy on the edges and soft and delicious in the middle - and they take just minutes to make. 

So go on, do yourself a favour. Make yourself a batch of these, brew a cup of tea (or coffee) and enjoy some fresh from the oven tomorrow as we remember the sacrifice of our ANZAC soldiers - and all of the men and women who devote their lives to protecting our country.

Sometimes I don’t know what would be harder, never eating gluten or eating gluten for years and then never again. For me, I ate gluten for 19 years before finding out I had coeliac disease - so I know what all the delicious gluten-filled foods taste like, but I can never eat them again.

Usually that doesn’t bother me, but sometimes new food products come out that I wish I could eat - and that’s exactly what happened when Arnott’s released their new Vegemite and Cheese Shapes.

When Jesse bought a packet of the shapes and raved about them, I sprung into action... on a mission to create my own version.... and somehow I nailed the copycat version!

Jesse decided these tasted exactly like the gluten-filled version and they were so easy to make. Better still? They’re free of questionable ingredients, egg free and made in minutes. Perfect for snacking, School lunchboxes or get-togethers with friends. 

They’re best eaten fresh so they’re super crunchy, but if you roll them out really thin (not thicker like the photos - they have softer centres and crunchy edges), they’ll stay fresh for 2-3 days at room temperature. 

Oh and if you're worried, don't be! This recipe doesn't use actual Vegemite (which is not gluten free!) - so you're safe!

He was known around our neighbourhood for his gift giving. Each day when he was younger and more able, he'd walk from his house to the local shops, stopping in at the grocery store and health food shops to pick up treats for the local shopkeepers and our family. 

He'd pop into the hardware store and give the cashier her favourite chocolates, stop in at his favourite cafe for a coffee and ply them with biscuits and when he arrived at our house or we visited his house, there would always be strawberry yogurt frogs (my favourite from the health food shop) and honey jumble biscuits waiting.

Truth be known, I actually didn't like homey jumble biscuits at the time. I was a kid who hated anything with icing (yep, even cake!), so the biscuits were instead happily devoured by my sister or Dad. 

But now as an adult, I'm over my icing hating days and now love anything with ginger or spices - but more importantly, honey jumble biscuits remind me of my Pa. 

There's a bit of an issue though - honey jumble biscuits aren't gluten free.... So this year, I decided I'd set myself a little challenge to come up with the best Gluten Free Honey Jumble Biscuits Recipe - in honour of my Pa and perfect for our Australia Day dessert table.

Recipe: Easy Vegan Pikelets (Gluten Free)

Pikelets were actually one of the first things I learnt from scratch - and cooking them is one of my strongest early food memories. 

Pikelets are kind of an Australian thing. They're little mini pancakes that can be eaten warm or at room temperature and are always a kid favourite. 

My pikelet memories all happened at my neighbour, Audrey's, house. Growing up my Nanna lived four hours away, but Audrey was always my stand in Grandma. She was an older lady who lived next door and I remember squeezing through the gaps in the hedges between our houses and hopping the stepping stones to reach her arched front door. 

Once I was inside the house, we'd make our way down the hallway and to her kitchen at the back of the house. There, in front of the window overlooking the garden, her electric frying pan would be heating up with butter sizzling away as it melted.

We'd crack the eggs and mix the flour and before I knew it, we were ready to cook. 

She'd hand me a spoon and I'd drop lumpy spoonfuls of batter onto the hot frying pan, listening to the batter sizzle as it hit the butter inside. 

We'd wait, carefully watching the pikelets as they were cooking and Audrey would flip them over to reveal the golden goodness underneath. One by one the pikelets would be stacked up on a plate, cooling whilst we cooked the rest of the batter.

It probably felt like a lifetime to four year old me, but soon enough they were ready to eat. Spread with butter and jam, Audrey and I sat down to our afternoon tea for two. 

I can still hear her voice in my head - slightly husky but with raised notes at the end of each sentence. I can see her round glasses and her curly silver hair and I can still remember the pikelets on her florally china plates. A food memory that's lasted 20 years and one that I hope I'll be able to recreate with my kids (or neighbours!) one day in the future. 

These pikelets are a little bit differently to Audrey's. They're gluten free, egg free, dairy free and vegan - but they're still delicious - and still memory worthy.

Recipe: The Best Homemade Gluten Free Lamingtons

There's a first and a last time for everything in life and this is the first and last time I'm making lamingtons...

Those are the words that came out of my mouth when I first experimented with this recipe. 

I had chocolate sauce all over the kitchen, dessicated coconut between my toes, sticky fingers and I was D-O-N-E. 

Or so I thought.

But don't get me wrong, I was still frustrated. I hate sticky, messy recipes and this was perhaps the messiest of all - but I was determined. I was going to succeed at making homemade lamingtons.

Recipe: Gluten Free & Vegan Monte Carlo Biscuits (Copycat Arnott's Recipe!)

Over the weekend, I shared a delicious Healthier Homemade Arnott's Kingston Biscuits Recipe with you - but since I was giving the ol' biscuit tin a makeover, I couldn't stop there. 

After making those Kingston Biscuits, we decided there was another fan favourite I just had to make; Monte Carlos! 

Monte Carlos share the same crunchy biscuits used in the Kingston Biscuits (though they're usually oval shaped), however, they're filling is totally different. Instead of chocolate, these babies are filled with a layer of raspberry jam and vanilla flavoured mock cream.

Whilst they weren't my favourite (I didn't like jam or anything frosting related at all when I was a kid), these were the ones everyone else in my family went for. They're sweet and have the perfect balance of soft and crunchy between the crunchy biscuit and soft filling. 

Just like the Kingston Biscuits, I made sure these were super easy to make so that you can impress your friends and family too! ;) Just think... next time you have people over to share a cup of tea or coffee, you can pull these babies (and the Kingstons!) out of your biscuit tin instead of a packet of boring store bought ones. 

Even better? They're a biscuit that everyone can enjoy as there's gluten free, vegan, dairy free and egg free options - and I've even included some sugar free options just in case you need that too!
