Lots of people are baking right now... .and I guess the answer to "what does the world do when self isolating" is bake... and watch Tiger King... and make TikTok videos (though we've yet to tick that box 😜)

But you might be surprised to know that lately, I haven't really baked much of anything. I've been so busy with work, that by the time the weekend rolls around, my brain is pretty much mush - so my weekends have consisted of random chores around the house, walking around the neighbourhood (because our local park is so busy that #socialdistancing is not possible) and thinking about next week's work.

But this weekend, I found some energy and Jesse and I spent most of the day in the kitchen baking up a storn... and we came up with some seriously delicious recipes.

This Caramel Almond Slice was definitely our favourite though, and the first recipe Jesse thought I should share with you all.

Whilst it might sounds a little laborious, I promise you this is a super simple recipe that will impress anyone you share it with. It's fancy enough for a high tea and casual enough to enjoy over coffee with friends - and it's one recipe you definitely need to add to your self isolation to do list.

I don't know about you, but I often find myself eating the same thing for lunch over and over and over again.

Maybe it's habit, maybe it's laziness - but I easily find myself stuck in a rut of boring lunches.

But this year, I'm on a mission to change that. With a little bit of meal prep on the weekends and a freezer full of delicious make ahead meals, my lunches have been looking better than ever - and this recipe is one of my new lunch faves.

And ohhhhh, what a wonderful time of year it is. 

Christmas time is my favourite eating time of the year - and it's also my favourite baking time of the year.

With so many Christmas parties and get-togethers planned each year throughout December, I love experimenting with new recipes and coming up with new treats to share with loved ones.

Whilst I definitely have my classic favourites I bake every single year (My top five? This year, I decided I wanted to put an easy twist on the classic Florentine cookie recipe.

Combining chewy dried fruit with crunchy nuts and a chewy, caramel coating which is then dipped in chocolate, Florentines are the perfect indulgent cookie that just feels fancier than your average chocolate chip or shortbread cookie.

As a child, I hated coconut.

I thought people who loved bounty bars and cherry ropes were strange, I though macaroons were a disgrace to the human race and would turn my nose up at any coconut enhanced treat.

But somewhere along the way, I fell in love with the enemy. You see, now I’m that “strange” person who puts coconut in ALL THE THINGS... and I promise you they’re delicious.

This Coconut Chocolate Slice Recipe came about on a whim. I decided I wanted to bake something sweet (and chocolatey) and there was a packet of shredded coconut in the pantry that was calling my name.
