Whilst being a coeliac means I can't often eat things I see when I'm out, I'm always searching for new ideas and inspiration - and the inspiration for this recipe was actually found in Disney's California Adventure last November.

You see, everytime we strolled through the park towards Pixar Pier, I saw the cart filled with bags of corn on the cob.

I never actually tried it in the parks, but when we got back home... I couldn't stop thinking about it... and so I set to work on creating my own version.

I don't know about you, but I often find myself eating the same thing for lunch over and over and over again.

Maybe it's habit, maybe it's laziness - but I easily find myself stuck in a rut of boring lunches.

But this year, I'm on a mission to change that. With a little bit of meal prep on the weekends and a freezer full of delicious make ahead meals, my lunches have been looking better than ever - and this recipe is one of my new lunch faves.

This time of year is the busiest social time of the year for me - and probably for you too.

Cornbread totally weirded me out the first time I made it. 

You see, growing up in Australia, I just didn't know anyone who ate cornbread or made it... and whenever we were on holidays in the US, we never really came across it. 

But then I fell in love with a Southern guy and suddenly found myself making all these foods I'd never even thought of making before I met him.

I mean really. The first Christmas we spent together, I asked him what traditional Christmas foods his family would eat for Christmas and he said "dressing" and I was like "err.... on salad?". 

Nope, not salad. Jesse was talking about a cornbread concoction of vegetables and eggs and cornbread, baked up and served in big slices. 

Combine this with making my first ever pumpkin pie (and being so confused as to how a pumpkin pie could actually taste good as I'd only ever eaten pumpkin as a savoury food - oh, how wrong I was) and my brain was pretty much imploding...

And let's be real, I was in serious foreign territory. 

My pumpkin pie may have been delicious, but my first ever batch of cornbread was flat and grossly crunchy and resembled more of a hockey puck than an edible delight.

But I was determined to conquer it.... and after many, many, many failed batches I did - and I've been keeping it from you.. 

Not on purpose, just because it felt a little too plain and boring... but sometimes boring things are actually the most delicious - so let me introduce to you The Best Gluten Free Cornbread Recipe.

This is the kind of recipe that needs to come with a warning label because it is that good

In fact, when I made it to photograph, I ate six of the nine pieces I made on my own in like 0.5 seconds. Poor Jesse got 2 pieces and my Mum just managed to snag one. 

Even if you're not a big veggie lover, this corn will totally change your mind. It's full of flavour and SO easy to make.

In the past, I've made it in the oven or grilled it on the barbecue - but this time I tried it in my new Air Fryer and was totally impressed. It cut the cooking time by half and before I knew it, I had flavourful crispy corn ready to devour. 

This is the perfect recipe for summer barbecues - or to serve as a side dish with just about anything. 

The smoked paprika adds a slightly smoky flavour that you won't be able to stop eating.... and you'll probably want to smother everything you eat from here on out in the smoky parmesan butter 😜

My oven takes hours to heat up... and even then, it rarely reaches the temperature I want - so anytime I want to bake something I have to make sure I plan ahead and turn the oven on in advance.

But sometimes you just want something quick. 

Years ago I bought my Mum an Air Fryer for Christmas for that very reason and it is hands down the best gift I’ve ever given her. She uses it at least three times a week and was so surprised when that was what was inside the big box under the tree. 

But, being a coeliac and having her air fryer always used for gluten foods, I stuck to persisting with the ever-slow oven - until last week!

My friends at Philips were kind enough to gift me with my very own air fryer - and let’s just say I might turn into a roasted vegetable by next week because the poor air fryer hasn’t stopped running since it landed on my bench! 

If you’re looking for a great Mother’s Day gift idea that will actually get used, I highly recommend surprising your Mum with one of these! The one pictured is the regular, smaller version - but think about upgrading to the XL if your Mum cooks for more than 2 people or wants to use it for things like roasting a chicken etc. 

These Garlic and Parmesan Roasted Potatoes can also be made in the oven, but the air fryer cut the cooking time down from 30-45 mins to just 15! 

Regardless of whether you cook them in the oven or air fryer, these potatoes are sure to be a hit as they’re full of flavour and so easy to make!

I never realised just how much being in a relationship with someone from 'the South' would impact my cooking. 

You see, as a kid I'd travelled to the US plenty of times on vacation - and whilst the portion sizes were so much bigger, most of the food was pretty similar to what you could find here in Australia - so why would this Southern boy eat any differently? 

Ohhh boy was I wrong. 

For the past 11 years, I've had a crash course in Southern cooking. Marrying a boy from Louisiana has meant that I now know how to make jambalaya, know what crawfish etouffee is and can correctly pronounce boudin.... among many other things.

But it wasn't all that easy to begin with.

You see, the first time Jesse came out for Christmas, I thought I'd make some Southern dishes so my family could experience some of his family's favourites - and Jesse would feel more at home. 

But I was totally out of my depth. 

The first time I made cornbread, I was sure things were going to go wrong. It looked like cake batter, felt like cake batter - but it definitely did not taste like cake batter... and surely those crunchy cornmeal bits would be awful?! 

And then I decided to make pumpkin pie too - which was the opposite of my should be sweet but is savoury dilemma. You see, I'd only ever eaten pumpkin as a savoury option - so making a dessert with pumpkin sounded like a disaster waiting to happen. 

Luckily, after a few attempts, I managed to nail the perfect pumpkin pie - and after a few flat pans of cornbread and a few kitchen disasters, I managed to nail a perfect fluffy cornbread recipe too.

... and the girl who once though cornbread was a terrible idea is cornbread's biggest fan... seriously, I could eat cornbread all day every day and not get tired of it. 

But recently I decided I wanted to do something different with cornbread. I was thinking about making my Easy Gluten Free Ham and Cheese Strata Recipe, but decided I wanted something different - and then wondered if I could swap the bread cubes for cornbread cubes.

Deciding to switch up the flavours too, I baked a pan of cornbread, cut it into cubes and then made an egg mix full of garlic, cheese and herbs and mixed it all together. This could have gone terribly wrong - but luckily it went deliciously right and became a new family favourite. 

Perfect for brunch or a side dish, I'm sure it will be a favourite in your house too!

This Pesto Caprese Quinoa Bake is one of those options. Easy to make and freezer friendly, I make it up in a big batch to pop into the freezer so I can simply reheat and eat during the week. 

It's got some sneaky veggies and a whole lot of flavour - because healthy lunches should also be delicious, right?!

I am all about easy make ahead recipes. We have a busy life that can often feel hectic - so quick and easy make ahead recipes make eating healthy meals a breeze. 

One of my favourite recipes to make on the weekend for the busy week ahead is my Easy Gluten Free Baked Falafel Recipe - but lately I've been adding a little twist with this carrot version. 

It's an easy way to sneak in some extra veggies and makes for a seriously delicious snack or lunch addition. All you have to do is blitz the mix in a food processor, roll them into balls and bake them in the oven - then you're ready to eat!

It's no secret that I don't like the cold, in winter I'll do anything to stay warm. From clutching warm cups of tea to snuggling up with all the cozy blankets I can find; i'll do anything I can to stay warm.

But it's not just staying warm that's important, it's also about staying healthy. And for me? Staying healthy involves eating all the nutrients I can.

Salads just aren't going to cut it in wintertime, so when the temperature drops, you'll find me in the kitchen making soup.

Rummaging through the fridge, I'll bring out all the vegetables I can find; slicing and dicing them, sautéing onions and adding whatever other ingredients sound good.

That's how this soup came about. It started with leftover bacon and became one of our current favourite meals.
