Recipe: Healthier Ham & Cheese Crepes + A GIVEAWAY!

If you've read Southern In-Law even once before, you'd know that we loveeeeeeee making healthier versions of classic recipes. I'm someone who believes that no food should be "off limits" - you either eat it in moderation, or create a healthier version of it. 

These days there are so many healthier options of classics foods on the market and sometimes all it takes is switching a single ingredient. Recently Hans launched a new healthier option onto the market - their Oliving by Hans Range. 

Oliving by Hans replaces some of the saturated fat found in deli meats (such as ham, bacon and salami) with olive oil so that you can have a healthier option without losing any of the taste. The range was inspired by the Mediterranean diet and is a first in the Australian market for smallgoods.

Inspired by Oliving by Hans' healthier ham range, we decided to share one of our favourite healthier classics - Ham and Cheese Savoury Crepes.

This is a dish we often whip up on "lazy night" for a quick and easy dinner that's still incredibly delicious - and unlike the crepes you'll find in restaurants, they're not full of fat and they're also gluten free!

I've never been a fan of eggs. As a baby, I'd spit them back at my Mum or hold my mouth so tightly shut that no spoon had a chance of entering - as a child, I'd gag at the smell of fried eggs - but as an adult? I gave them a little bit more of a chance. 

I've always used eggs in cakes and baked goods - but the idea of eating anything that remotely resembled eggs in looks or texture totally skieved me out. Crepes? Nope... Frittatas... Nope... Now, they're two of my favourite dishes.

Whilst I still despise eggs on their own (think, fried eggs, poached eggs, boiled eggs) due to their "eggy" flavour, I've actually come to appreciate them. When I told my Mum I was going to try making these crepes, she knew I loved the Apple Cinnamon Crepes, but she thought that savoury crepes would be an epic fail and too eggy for me - but I absolutely love them and I've made them dozens of times since the first time. 

Whilst they don't contain any flour and use a whole egg, a little bit of egg whites and a touch of greek yogurt stop these, what we call, "Omelette Crepes" from having an overpowering eggy taste. Plus, when you fill them with a creamy pesto spread, baby spinach leaves and roasted chicken breast - you've got an absolutely delicious combination. 

Our tastes definitely change as we get older. I was the kid who didn't like much of anything and never tried new things without a fight - but now, I eat an incredible variety of food and am the first one to try out new combinations.. the only thing stopping me from trying ALL THE THINGS is allergies, but I make it work in my own Kristy friendly way ;)

Healthy Apple and Cinnamon Crepes with Mascarpone Topping Recipe

So, I have a confession: I'm kind of obsessed with crepes. Ever since I got our awesome new crepe pan, I've been whipping up batch after batch of delicious crepes - but this recipe may have to be my absolute favourite. 

Not only is it so simple to make, it's so delicious you'll almost want to lick the plate (Jesse would, but I'm a bit more lady like than that :P). 

The apples are super juicy and delicious and covered in cinnamon, the crepes are light and the perfect vessel for soaking up the incredible creamy mascarpone topping that turns into a heavenly dollop of goodness once to warm up from the apples.

This recipe kind of took my crepe addiction to a whole new level. In fact, I'd just devoured them (at the little blue "Southern In-Law table" whilst taking photos - bite shots are important guys!!) and I called Jesse and said "do you know how you spell genius? K-R-I-S-T-Y". Modest? Apparently not... But these crepes are so incredibly good I can afford to blow my own trumpet. 

It's the combination of crepes, warm cinnamon apples and creamy mascarpone that takes this dish over the edge. It's perfect for breakfast or lunch or dessert or really any time of the day! (Jesse says sweet lunches are odd, unless it's PB&J, but I say any excuse to eat breakfasty foods is fine with me!)
