My mornings always start with tea and breakfast. 

Some people start with caffeine, others start with food - I start with both... and this recipe is the best of both worlds too. 

Inspired by the flavours of a traditional tiramisu, it combines delicious coffee oatmeal with swirls of chocolate oatmeal for the ultimate breakfast treat.

It's a super simple recipe that looks impressive and doesn't taste healthy whatsoever.

I've been enjoying these slices cold with my favourite almond butter and fresh fruit - whilst Jesse likes his hot and enjoyed on it's own. 

The possibilities are endless and you can make the coffee flavour as strong as you like by using more/less coffee - or leaving it out altogether if you just want a chocolate vanilla swirled baked oatmeal.

If there's one thing I know for sure about myself, it's this; I hate winter. 

SAD (seasonal affective disorder) is definitely a thing in my mind because, come winter, I go into hibernation. 

On Monday I went to head out on my morning walk in my usual shorts and a t-shirt only to be hit with cold air the second I walked out the door. It's okay, I thought... it'll warm up

Ten minutes later, I'm walking around the park covered in goose bumps... looking at the patches of sun but wondering why on earth I wasn't feeling their warmth and then it hit me... 

WINTER IS COMING.

Dread. Pain. Anxiety. For a second there I thought I was going to have a full on panic attack. 

If summer was a person, I'd be the one wrapped around it's heels, sitting on it's feet, BEGGING it not to leave me. Forget the promise of returning in 6 months time, DO NOT LEAVE ME! 

But then I realised winter was inevitable (and yes I know, autumn comes first.. but in my world it's either summer or winter - also known as time to be a social butterfly or time to forget my own existence) and I tried to think of all the good things about winter.

And then I went home to do what every insane person would do.

I flicked the dial on the oven to heat it up and I made baked rice pudding. 

Why? To get a head start on convincing myself that winter isn't really that bad... and I tell you what, friends... if winter involves steaming hot bowls of creamy rice pudding, I'll take it.... for a few months at least 😜

And northern hemisphere friends, don't let me lose you - I can assure you that this tastes delicious cold too... so you can eat it all year long.

Do you ever find your schedule jam packed all of a sudden? 

I feel like mine is a cycle of feast or a famine. Whilst my week days are always busy, my evenings are usually free - usually being the operative word here.

This week, however? I have something booked in day and night for the whole week.

These busy weeks call for food prep and forward planning and this is one of my favourite make ahead recipes at the moment.

You see, I often come up with these quick and easy baked recipes simply because it means I have 10-15 minutes to do whatever I please.

This Spinach Artichoke Quinoa Casserole is a current favourite in our house. Whilst Jesse turned his nose up at it the first time I made it (because he'd never eaten artichokes), it only took one bite to convince him that it was a winning recipe - and one that needed to be share. 

Fast forward to now and this is a recipe we still make once a week. Sometimes with grilled chicken thrown into the mix, other times as a meatless meal - but everytime gobbled down in moments because it is seriously, ridiculously good!

Valentine's Day is tomorrow, and if you're anything like me - you're probably feeling like it snuck up out of nowhere.

Wasn't it Christmas yesterday? Weren't we just celebrating Valentine's Day? How did we get here. 

If that's the case, worry not.. because I have the perfect Valentine's Day to share with you. Why is it perfect? Because it's a last minute recipe that uses just three ingredients and is ready to devour in less than half an hour...

This is a recipe we've made dozens of times - but one I'd almost forgotten about until last week when World Nutella Day rolled around and we had a jar of Nutella sitting around that needed to be used up. 

Enter, brownies.

A tray of brownies with gooey fudgy centres and crispy, chewy edges. 

Brownies so good that you'll have to hide them from your husband who would happily devour an entire tray in one sitting.

My Paleo Banana Bread Recipe is a family favourite recipe that never gets old - regardless of how many times I make it. As soon as we have spotty bananas, you'll find me in the kitchen with my coconut flour, almond flour and all the ingredients needed to whip up a batch. 

But what do you do when you don't have any bananas? And you don't have any pumpkin to make The Best Paleo Pumpkin Bread Recipe?

Why, you take those base recipes and create something totally new, of course!

This Paleo Zucchini Bread Recipe is a new take on both of those recipes and it's seriously delicious.

Though my family weren't so convinced when I first told them about it (because, uh.. vegetables), one bite was all it took for them to fall in love with it too.

It's moist and delicious and only requires one bowl to make it. Forget food processors and mixers, a spoon and a bowl are all it takes!

The hardest part of the recipe is waiting for it to bake - and cool.... though I found a loophole for that too. If you're impatient like me and can't wait for it to bake for an hour and then cool - simply make muffins instead. The cooking time will vary depending on the size of your muffins but they'll take a fraction of the time!
